Recipe by Naiya Sheth:Time for some healthy recipe. As the name indicates it mainly contains palak-spinach and paneer. To make it healthier, instead of blanching I just saute spinach and used homemade fresh paneer. Basically this recipe is more suitable as starter but can be served as farsan or any time snack also. Let's start making Palak Paneer balls. As per the shape we can call them palak paneer rolls or cutlets also. Enjoy cooking!

Preparation time - 10 to 12 minutes
Cooking time - 20 to 25 minutes
Makes 10 balls approx.

Ingredients to make Palak Paneer Balls: 

2 tablespoon oil
2 to 3 green chilies
1 small piece ginger
2 to 3 piece garlic (opt.)
1 bunch palak/spinach
3 boiled and grated potatoes
1/2 cup bread crumbs
1 1/2 teaspoon cumin coriander powder
A pinch garam masala
1/4 teaspoon amchur/dry mango powder
Salt to taste
1 cube grated cheese (opt.)

For outer layer:

2 tablespoon cornflour
1 tablespoon refined flour
1 teaspoon rice flour
1/2 teaspoon chili flacks
1/2 teaspoon salt
1/2 cup water
Dry bread crumbs as needed for coating

Method to make Palak Paneer Balls:

  • In a pan heat oil and add chili, ginger and garlic ti it.
  • Cook for 2 minutes and then add chopped and washed spinach to it. Saute until palak shrinks.
  • Let it cool and then make smooth paste of it.
  • Add all other ingredients to it and mix well. If mixture is sticky add some more bread crumbs to make it as paratha dough.
  • Make equal size balls from it and keep aside.

For outer layer:

  • Mix all the ingredients of slurry excluding bread crumbs.

How to assemble:

  • Dip ball in above slurry and then roll in dry bread crumbs. Repeat the same for remaining.
  • To make crispy outer layer repeat the same method once again for all balls. 
  • Rest for 5 to 10 minutes in refrigerator. At this stage you can store them in air tight container for 5 to 7 days in refrigerator.
  • Heat oil and fry at medium flame until golden brown.
  • To make it healthier cook in appam maker instead of frying.
  • Hot and healthy Palak paneer balls are ready to serve.
