Recipe by Naiya Sheth: Again Quick, easy and delicious fusion recipe. Early we made Mexican Papdi Chat and now it's time to make homemade recipe of Mexican Bhel. Basically, it's a delicious mixture of lots of vegetables, sauces and beans with a crunch of tiny chips. For crunch, I tried to add very small nacho chips made from maize flour and refined flour. A

Ingredients to make Mexican Bhel:
For crunchy tiny chips:
1 cup maize flour
1/2 cup refined flour
Salt to taste
1/2 teaspoon carrom seeds
1 tablespoon oil
Oil for frying
For Bhel:
1/4 cup finely chopped onion
1/4 finely chopped tomatoes
1/4 cup boiled small kidney beans
1/4 cup boiled sweet corn
2 tablespoon green capsicum
1 tablespoon red bell pepper
1 tablespoon yellow bell pepper
1/4 cup finely chopped paneer
3 to 4 tablespoon grated cheese
1 tablespoon crushed garlic
2 tablespoon finely chopped green chili
2 to 3 tablespoon finely chopped coriander leaves
3 to 4 tablespoon tomato ketchup
2 to 3 tablespoon chili tomato sauce
For garnishing:
Nylon sev
coriander leaves
Cheese (opt.)
Method to make Mexican Bhel:
For crunchy tiny chips:
- Mix all ingredients of crunchy tiny chips and knead semi-soft dough from it.
- keep aside covered for 10 minutes.
- Make equal size balls from it and roll medium thick tortillas from it. Cut very small squares from it and then prick it.
- Heat oil and fry at medium flame until crisp.
How to assemble Mexican Bhel:
- In a big bowl mix all ingredients of excluding chips.
- Mix properly. The proportion of all ingredients can be different as per the choice.
- At the time of serving add chips and mix well.
- Transfer Mexican Bhel to serving bowl and garnish with nylon sev and coriander. Grated cheese also can be sprinkled for cheese loveers.
- Serve tangy Mexican Bhel immediately after adding cheese to enjoy the crunch.
