Recipe by Naiya Sheth: As we all know vada pav is a very well known, mouthwatering street food from Mumbai. It is famous in other places also. Today I am trying to make a little cheesier and tiny version of same delicious vada pav. Actually, I saw this recipe somewhere, but I now don't remember where. So, I tried to make it my way. And it was just yummy. Because of small size, it can be served as starter or finger food in kitty parties also. So let's make this super delicious and cheesy version of famous street food, Tiny Vada Pav with Creamy Cheese Sauce.

Ingredients to make Tiny Vada Pav with Creamy Cheese Sauce:
6 mini burger buns
Garlic chutney as needed
Butter as needed
For stuffing:
1 cup boiled and mashed potatoes
1 teaspoon oil
1/2 teaspoon fennel seeds roughly crushed
1/8 teaspoon mustard seeds
8 to 10 curry leaves finely chopped
1 teaspoon finely chopped green chilies
A pinch turmeric powder
1 tablespoon finely chopped coriander
1 tablespoon finely chopped mint leaves
Salt to taste
For creamy cheese sauce:
1 tablespoon oil
1 tablespoon refined flour
1 cup milk
Salt to taste
1 teaspoon chopped coriander
1 teaspoon chopped mint
2 cubes grated cheese
1/2 teaspoon chili flacks
Method to make Tiny Vada Pav with Creamy Cheese Sauce:
For stuffing:
- Heat oil and add mustard seeds to it. When it crackles add green chili, curry leaves and fennel, cook for a while and add mint and coriander to it. At last add turmeric powder, and mix well.
- Add this tadka to boiled potatoes and add salt to taste.
- Mix well. Keep aside.
For Cheese Sauce:
- Heat oil and add refined flour to it. Cook till light pink in color.
- Add milk to it step by step to avoid lumps. Cook until thick.
- Add seasoning and mix well.
- Keep aside.
How to assemble:
- For assembling first of all scoop all mini buns, make sure to make a cap as shown to cover.
- Apply butter in the cavity and then garlic chutney also.
- Fill the whole cavity with above stuffing.
- Try to fill big quantity of stuffing.
- Cover with the cap and apply butter on it.
- Shallow fry little crispy.
How to serve:
- Place hot crisp tiny vada pavs on a serving plate and pour warm creamy cheese sauce to it. Sprinkle some chili flacks over it. Place toothpicks for convenience.
- Hot and cheesy Tiny Vada Pav with Creamy Cheese Sauce is ready to eat.
