Ingredients to make Khari Chaat:
For the Khari Chaat:
10-12 khari (crispy puff pastries)
1 cup boiled and chopped potatoes
1/2 cup boiled chickpeas
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
1/4 cup finely chopped cucumber
1/4 cup finely chopped bell peppers (optional)
Salt to taste
1 teaspoon roasted cumin powder
1/2 teaspoon red chili powder
1/2 teaspoon chaat masala
For Garnishing:
Pomegranate seeds
Sev (crunchy chickpea flour noodles)
Finely chopped fresh coriander leaves
For the Chutneys:
Tamarind chutney
Green chutney (made with mint and coriander)
Red garlic chutney
Instructions to make Khari Chaat:
Prepare the Chutney mixture:
In a bowl, mix the tamarind chutney, green chutney, and
red garlic chutney. Adjust the quantities to achieve the desired sweetness and
spiciness.
Add salt to taste if required and set the chutneys aside.
Prepare the Spice Mix:
In a small bowl, combine roasted cumin powder, red chili
powder, salt and chaat masala. Mix well and keep it ready.
For Assembling the Khari Chaat:
On a serving platter, arrange the khari.
Start by adding a layer of chopped potatoes, followed by chickpeas.
Sprinkle a generous amount of finely chopped onions, tomatoes, cucumber and
bell peppers (if using).
Drizzle the chutney mixture evenly over the pastries.
