Stop Washing Dishes: The Viral One-Pot Mexican Rice Recipe You Need Tonight

Preparation time - 5 to 7 minutes 

Cooking time 20 to 25 minutes 

Serves 2 as a single meal

Ingredients to make One Pot Maxican Rice:

1/2 cup basmati rice 

1 1/2 tablespoon oil

1 1/2 tablespoon butter 

10 to 12 cloves garlic 

1 medium size onion 

1 small tomato 

2 tablespoon rajma 

2 tablespoon boiled sweet corn 

2 tablespoon chopped capsicum 

2 tablespoon par boiled green peas 

Salt to taste 

3 teaspoon kashmiri red chilli powder 

1 teaspoon roasted cumin powder 

1 teaspoon chilli flakes (opt)

2 teaspoon mix herbs 

1 to 2 teaspoon tomato ketchup (as per choice)



Method to make One Pot Maxican Rice:

  • First of all wash and soak basmati rice for 30 minutes.
  • Wash and soak rajma in hot water for minimum 7 to 8 hours or overnight. Later again wash and drain water. Add fresh water and salt to it & pressure cook it.
  • Par boiled sweet corn and green peas. 
  • Chop onion and capsicum in small pieces. 
  • Chop and make pure of tomato. 
  • Make paste from garlic.
  • Heat oil and butter in a nonstick pan and saute onion and garlic to it. Later add all chopped vegetables to it. 
  • Now it's time to add boiled rajma and sweet corn to it. Cook for 2 minutes and then add tomato pure to it. 
  • Add all dry spices in it and mix well. 
  • Cook for one to two minutes. 
  • Add soaked and drained rice in it. Mix well carefully to avoid breaking of rice grains. 
  • Cook for one minute and then add 3/4 to 1 cup water to it. (Quantity of water may differ as per the quality of rice and it also depends on how old it is). 
  • Mix and cook covered for 5 to 7 minutes at medium flame. Stir occasionally. 
  • When cooked add tomato ketchup to it. Mix well.
  • Our piping hot One Pot Maxican Rice is ready to serve.
