Today, we’re elevating that comfort food feeling with my recipe for Vegetable Sooji Toast. Forget the complicated, time-consuming meals—this dish brings together the warm crunch of toast with a vibrant, fluffy topping made from sooji (semolina) and a rainbow of fresh vegetables. Preparation time - 5 to 7 minutes
Cooking time - 10 minutes
Makes 2 toasts
Ingredients to make Sooji Toast:
2 slices of bread
4 tablespoon sooji/semolina
2 tablespoon curd
Salt to taste
1 tablespoon finely chopped onion
1 tablespoon finely chopped capsicum 1 tablespoon boiled sweet corn
1 tablespoon finely chopped tomato
1 tablespoon finely chopped coriander leaves
1 teaspoon freshly ground black pepper
1 teaspoon chilli flakes
1 teaspoon finely chopped green chillies
1 teaspoon oregano ( opt)
Butter/oil as needed
To serve with:
Tomato ketchup
Method to make Sooji Toast:
First of all in a mixing bowl mix sooji and curd. Mix well and keep a side covered for 10 minutes.
Meanwhile wash and chop all vegetables.
After 10 minutes mix all vegetables and dry ingredients to sooji mixture.
At this stage you can add or omit your choice of vegetables.
Adjust consistency by adding water.
On a chopping board place a bread and spread above mixture over it.
Heat nonstick tavi and place above brand upside down. So that bread remains up.
Spread some butter/oil over and at the sides of bread. Let it cook for about 2 minutes at medium flame. Carefully flip the bread and let it cook until bread becomes crispy.
Repeat the same for remaining.
I took white and treamed bread but you can take your choice of bread.
Our hot and crispy Sooji Toast is ready to serve. You can serve it with tomato ketchup or green chutney.
