Veggie Delight Sandwich recipe: How to make Veg Sandwich

Ingredients to make Veg. Sandwich:
For the Filling:
1 medium thinly sliced cucumber
1 medium sliced tomato
1 medium thinly sliced bell pepper (any colour)
1 small thinly sliced onion
1 medium carrot grated
1 cup baby spinach leaves or lettuce
1 sliced boiled potato
Salt and pepper to taste
Chat masala or sandwich masala to taste
Grated cheese as per choice
For the Spread:
2 tablespoons mayonnaise
4 to 5 tablespoon freshly made green chutney
2 to 3 tablespoon tomato ketchup
For Assembling:
8 slices of whole grain bread or your preferred bread
Butter or olive oil for toasting
Method to make veg. Sandwich:
· Wash
and slice the cucumber, tomato, bell pepper, and onion into thin, even slices.
Grate the carrot. Slice the avocado and lightly season it with salt and pepper.
Lay
out the slices of bread on a clean surface. If you like, you can lightly toast
the bread and then spread a thin layer of butter or olive oil on one side of
each slice.
Start
building the sandwich by spreading a generous layer of green chutney on one
side of each slice. Place a few baby spinach leaves or lettuce on one slice.
Then, layer on the sliced cucumber, tomato, bell pepper, red onion, and grated
carrot.
Gently
place the boiled potato slices on top of the layered veggies.
Now
it’s time to spread some mayonnaise & grated cheese over it.
Sprinkle
a pinch of salt, pepper, chat masala or sandwich masala over it.
Take
another slice of bread and spread some tomato ketchup over it. Keep it facing
down and place it on top of the veggies, creating a sandwich.
You
can grill it in griller/tawa if you required.
Even
it will taste great without grilling also.
Carefully
cut the sandwich in half diagonally or into quarters. This makes it easier to
handle and enjoy. If you're not eating it immediately, wrap it in parchment
paper or foil to keep it fresh.
Serve
