Quick and delicious Poha recipe

Ingredients to make Poha:
1 cup of poha (flattened rice)
1 medium-sized onion, finely chopped
2 to 3 green chilies, chopped
2 to 3 tablespoon peanuts
1/4 cup of fresh green peas (you can use frozen too)
1 medium-sized potato, peeled and diced
1/2 teaspoon of mustard seeds
8-10 curry leaves
1/4 teaspoon of turmeric powder
Salt to taste
A pinch of sugar (optional, but it enhances the flavours)
2 teaspoon lemon juice
2 tablespoon oil
For garnishing:
Freshly chopped coriander leaves
Lemon wedges, for serving
Method to make Poha:
· Rinse
the poha in a strainer under cold running water until it's soft but not mushy.
Gently fluff it with your fingers while rinsing. Let it sit in the strainer to
drain excess water.
Transfer
it to a wide vessel and add salt, turmeric, sugar & lemon juice to it. Mix
well and keep a side. If you wish to add sugar, lemon juice is necessary.
Heat
a pan with oil. Add the peanuts and roast them until they turn golden. Remove
them from the pan and set them aside. In the same pan, add a bit more oil if
needed and add mustard seeds to it.
Now add green chilies & curry leaves to
it and add potatoes to it. sauté the diced potatoes until they're lightly
golden and cooked through, you can add a pinch of salt at this stage to make
cooking process speedy and little salty taste of potatoes.
Add
the finely chopped onions and sauté until they turn translucent. Then, toss in
the green peas and cook for a few more minutes until they're tender.
Gently
fold in the soaked drained and spiced poha, mixing it well with the veggies.
Allow it to cook for a few minutes, letting the flavours meld together.
Finally,
add back the roasted peanuts to it. Give everything a good stir, ensuring all
the ingredients are well combined.
Garnish
with freshly chopped coriander leaves and serve the poha hot with lemon wedges
on the side. The tanginess of the lemon takes the dish to a whole new level!
