Recipe by Naiya Sheth: As the name indicates in this mouthwatering street food, I tried to place bread inside and vada outside. Exactly reverse from the original recipe of vada pav. All ingredients are almost same, but I added cheese to make it more delicious. So, let's make Ulta Vada Pav/Vada Pav Inside Out tonight.

Ingredients to make Vada Pav:
For inner layer:
2 slices sandwich breadGarlic chutney as needed
Green chutney as needed
1 cheese slice
Butter
2 green chilies finely chopped
1/8 tea teaspoon turmeric powder
3 to 4 curry leaves chopped
5 to 6 mint leaves chopped
A pinch mustard seeds
Salt to taste
1 teaspoon fennel
1 teaspoon oil
Butter
For outer layer:
2 boiled and mashed potatoes2 green chilies finely chopped
1/8 tea teaspoon turmeric powder
3 to 4 curry leaves chopped
5 to 6 mint leaves chopped
A pinch mustard seeds
Salt to taste
1 teaspoon fennel
1 teaspoon oil
For Covering:
1/2 cup gram flour
1 tablespoon rice flour
1/4 teaspoon turmeric powder
Salt to taste
A pinch baking soda
Oil for frying
Green chutney
1/4 teaspoon turmeric powder
Salt to taste
A pinch baking soda
Oil for frying
To serve with:
Tomato ketchupGreen chutney
Method to make Ulta Vada Pav - Vada Pav Inside Out:
For outer layer:
- Heat oil in a pan and add mustard seeds, when they crackle add green chilies. Add chopped curry leaves, coriander, fennel, mint leaves and remove from flame.
- Take boiled and mashed potatoes in another bowl and add mixture to it.
- Add chopped mint leaves, turmeric powder and salt to taste. Mix well.
- Keep aside.
For inner layer:
- Dut sides of bread, apply green chutney and garlic chutney on each side.
- Cut them into 4 parts.
- cover and shallow fry with butter to crisp.
- Cut cheese slice into 4 parts and place inside the crispy slices.
For Covering:
- Mix all the ingredients of covering and make semi thick better from it by adding sufficient water.
How to assemble:
- Cover square ready bread slice with potato mixture properly.
- Heat oil. Dip vada in better and fry in hot oil.
- When ready drain on absorbent paper and keep aside.
- Enjoy Hot Ulta Vada Pav - Vada Pav Inside Out with tomato ketchup and green chutney.
