Recipe by Naiya Sheth:Again one more Gujarati farsan recipe. Basically, muthiya is a very popular steamed farsan/snack in Gujarat-India. It is low cal and healthy. Somehow it is easy to make also. Personally, I love the taste of methi bhaji-fenugreek leaves. So, I tried to add it with palakh/spinach. And it came out very nicely. So, let's make this delicious palakh methi muthiya as single meal dinner/snack/lunch box recipe or even a good idea as the purely traditional starter also.

Ingredients to make Palakh Methi Muthiya:
1/4 cup chopped spinach/palakh
1/4 cup chopped fenugreek leaves/methi
1/4 cup curd
1 tablespoon warm oil
1 teaspoon chopped green chillies
1/2 teaspoon crushed ginger
Salt to taste
1/4 teaspoon turmeric powder
1 tablespoon sugar
A pinch soda bicarb
2 tablespoon besan/gram flour
Coarse wheat flour as needed
For tadka/tempering:
2 tablespoon oil
1 teaspoon mustard seeds
1 tablespoon sesame seeds
A pinch methi powder/dry fenugreek powder
2 to 3 tablespoon water
For garnishing:
Finely chopped coriander leaves
Grated fresh coconut
Method to make Palakh Methi Muthiya:
- Wash and dry and finely chop palakh and methi.
- In a big mixing bowl add palakh, methi,curd and all spices excluding oil and soda bicarb.
- Mix well for minimum 3 to 4 minutes. Now add besan and wheat flour. Make semi-soft dough from it.
- Now spread it flat and sprinkle soda bicarb over it. Pour warm oil on it and mix well.
- Make equal small balls from it.
- Place them on greased plate in the hot steamer.
- Steam for 10 to 12 minutes at full flame.
- When ready rest for 5 minutes and then remove.
For tadka:
- Heat oil in a pan and add mustard seeds to it. When they crackle add methi powder and sesame seeds.
- Add water to it carefully.
- Now add cool muthiya to it and toss slowly and carefully.
- Garnish with Coriander leaves and coconut.
- Hot and healthy Palakh Methi Muthiya is ready to serve.
Tips:
- For large quantity spread it in steamer plate and spread tadka on it.
- Cut in the square shape and serve.
