How to Make Rainbow Lassi

Recipe by Naiya Sheth: Learn how to make rainbow lussi. As we all know lassi is a thicker version of sweet butter milk. In earlier recipe we learn about making of dry fruit lassi, jelly lassi, mango lassi and chocolate lassi mix fruit lassi and strawberry lassi with vanilla ice cream. In this recipe it's a great combination of three colours. Pink with rich taste of gulkand, white with vanilla and green with the very rich taste of variyali - fennel seeds. It is not very hard but little tricky. So try this rich creamy recipe of Rainbow lassi  today.

Makes -6 glasses

Ingredients to make Rainbow Lassi:

6 cups hung curd
60 ml. fresh cream
3/4 cup chilled milk
7 to 8 table spoon powder sugar
2 table spoon gulkand - rose petal jam
2 table spoon fennel seeds soaked in 2 table spoon milk
2 to 3 drops vanilla essence
1 table spoon roasted and chopped cashews
1 table spoon soaked raisins
1  table spoon roasted and chopped almonds
1 drop pink food colour (opt.)
1 drop green food colour (opt.)

For garnishing:

Rose petals
Roasted cashews and almonds
Soaked raisins

Method to make Rainbow Lassi:

  • Hang curd for 1 hour in refrigerator.

For Rose Lassi:

  • Take 2 cups of hung curd in a mixture jar and add gulkand, 2 table spoon sugar powder, 1/4 cup milk, food colour and 20 ml. fresh cream to it, churn properly.
  • Keep a side in refrigerator.

For Vanilla Lassi:

  • In a mixture jar take 2 cups hung curd, vanilla essence, 2 to 3 table spoon powder sugar, 20 ml. fresh cream and 1/4 cup milk. Churn properly.
  • Add dry fruits to it and mix well.
  • Keep a side in refrigerator.

For Fennel Lassi:

  • In a mixture jar add 2 cups curd, 3 table spoon powder sugar, 20 ml. fresh cream, food colour and 1/4 cup milk and soaked fennel seeds.
  • Churn properly and keep a side in refrigerator.

How to assemble:

  • At the time of serving in a serving glass make a layer of fennel lassi first.
  • Now pore vanilla lassi over it very carefully.
  • At last pore rose lassi over it carefully. 
  • Repeat the same for remaining.
  • Garnish Rainbow lassi with rose petals and dry fruits.anilla essence, 
  • Vanilla ice cream can be added in staed of vanilla essence, cream and milk to vanilla lassi.
