is a colorful Italian dish. Here in this recipe Vegetable Florentine is
a vegetarian version of the original dish. It contains lots of
vegetables so, good source of vitamins. And above all is made in
microwave so, quick and easy also.

Ingredients to make Vegetable Florentine:
1 cup spinach pure
1 cup boiled spaghetti
½ cup cream
1 cup par boiled vegetables
(French beans, carrot, cauliflower, green peas etc.)
1 table spoon oil
½ cup grated cheese
½ cup chopped onion
1½ cup milk
1 table spoon refined flour
1 table spoon butter
1 tea spoon black pepper powder
Salt to taste
1 tea spoon sugar
Method to make Vegetable Florentine:
- Mix oil and onion in a microwave proof baking dish and cook for 1 minute at MICRO HI.
- Add spinach pure and spices, cook for 2 minutes at MICRO HI. Mix cream and keep a side.
- In another microwave proof bowl mix butter spaghetti, vegetables and refined flour. Cook for 2 minutes at MICRO HI.
- Add milk, sugar, black pepper powder and salt to taste. Again cook for 4 minutes at MICRO HI.
- Pour the spaghetti mixture over spinach base.
- Spread cheese over it and put butter at regular interval. Cook for 4 minutes at MICRO HI.
- Hot and colorful vegetable Florentine is ready to serve.
