How To Make Instant Sev Khamni

Recipe by Naiya Sheth: Learn how to make instant sev khamni. Normally sev khamni is made from gram dal- chana dal. But here it’s a homemade recipe for instant sev khamni, which is made from gram flour – chana flour. It will make the whole process very easy and quick.

Preparation time – 70 minutes
Cooking time – 15 minutes
Serves – 4 people

Ingredients to make instant sev khamni:

2 cup gram flour
3 table spoon sugar
½ table spoon asafoetida – hing
1 tea spoon ginger paste
2 tea spoon green chili paste
2 tea spoon garlic paste
Salt to taste
1 to 1½ cup water
1 lemon juice
½ tea spoon eno – fruit salt

Ingredients to make Tadka – Vaghar:
3 to 4 table spoon oil
1 tea spoon mustard seeds
¼ tea spoon asafoetida
10 no. raisins
1 table spoon sugar
½ cup water

For garnishing:
Nylon sev
chopped coriander leaves

Method to make Instant Sev Khamni:

(1) In a steamer add water and allow boiling.
(2) Mean while in a big bowl mix gram flour, hing, sugar, salt, chili paste, ginger paste, garlic paste and lemon juice. Add water and mix properly.
(3) Add fruit salt and whip properly in single direction.
(4) Pour above mixture in a steamer plate and steam for 10 to 15 minutes.
(5) When cooked remove from steamer and keep a side for at least 50 to 60 minutes.
(6) Crush it coarsely by hand and strain with the help of wheat strainer.
(7) In another pan heat oil and add mustard seeds, when it crackles add hing, raisins and sugar. Now add water and let sugar dissolve.
(8) Pour it on above mixture. Mix well.
(9) Transfer it in serving bowl and garnish with nylon sev, pomegranate and coriander leaves.

Hot and delicious Instant Sev Khamni is ready to serve.
