Uttrayan Special Recipe - Laddu

In earlier recipe we learn to make Chocolaty Peanut Chikki. It was very delicious, but now it's time to make different types of laddus for Uttrayan - makarsakranti. In this home made recipe we will make laddu from til - sesame seeds, peanuts and mumra - puffed rice. In Maharashtra it is said that "til gud khao god god bolo." Means eat till laddu and speak sweet. But we will make laddu from til, peanut and puffed rice. So, try this delicious recipe of Laddu and enjoy uttrayan.



Preparation time - 10 minutesCooking time - 10 to 15 minutes

Ingredients to make Uttrayan Special Recipe - Laddu: 

For Mumra - Puffed Rice Laddu:

1 table spoon ghee - clarified butter
1 cup grated jaggery
1 1/2 to 1 3/4 cups roasted puffed rice

For Sesame Laddu:

1 table spoon ghee - clarified butter
1 cup grated jaggery
1 1/4 to 1 1/2 cups roasted sesame seeds

For Peanut Laddu: 

1 table spoon ghee - clarified butter
1 cup grated jaggery
1 1/4 to 1 1/2 cups roasted and crushed peanuts

Method to make Uttrayan Special Recipe - Laddu:

 

For Mumra - Puffed Rice Laddu:

  • In a non stick pan heat ghee and add grated jaggery to it. Cook till jaggery melts properly. 
  • When ready add roasted puffed rice. And mix well.
  • Remove from flame and transfer to a plate. Grease your palm with ghee and then take a small portion of above material to your hand. Make a small laddu from it.
  • Repeat the same for remaining.
  • Let them cool at room temperature. Tasty and crunchy Puffed Rice Laddu is ready. 

For Sesame Laddu:

 

  • In a non stick pan heat ghee and add grated jaggery to it. Cook till jaggery melts properly. 
  • When ready add roasted sesame seeds to it. And mix well.
  • Remove from flame and transfer to a plate. Grease your palm with ghee and then take a small portion of above material to your hand. Make a small laddu from it.
  • Repeat the same for remaining.
  • Let them cool at room temperature. Tasty and crunchy Sesame Laddu is ready.

For Peanut Laddu: 

 

  • In a non stick pan heat ghee and add grated jaggery to it. Cook till jaggery melts properly. 
  • When ready add roasted and crushed peanuts to it. And mix well. 
  • Always remove skin from peanuts and then crush.  (I crush it in chilli cutter. But you may use semi crushed roasted peanuts also.)
  • Remove from flame and transfer to a plate. Grease your palm with ghee and then take a small portion of above material to your hand. Make a small laddu from it.
  • Repeat the same for remaining.
  • Let them cool at room temperature. Tasty and crunchy Peanut Laddu is ready. 

Tips:

  • You may add cocoa powder and drinking chocolate powder as the earlier recipe.
