Cooking time – 10 to 15 minutes
Preparation time 20 to 25 minutes
Soaking time 6 to 7 hours
Ingredients to make Burrito Bowl at Home:
¼ cup boiled kidney beans
¼ cup boiled sweetcorn
¼ cup finely chopped onion
¼ cup finely chopped tomatoes/cherry tomatoes
Paneer from 500 ml milk
¼ cup chopped lettuce
2 table spoon finely chopped red bell pepper
2 table spoon finely chopped yellow bell pepper
2 table spoon finely chopped green capsicum
½ cup boiled rice ( I took basmati rice)
Salt to taste
2 to 3 tablespoon sour cream
Salsa sauce as needed
2 to 3 tablespoon roasted mix seed (opt)
(melon, sunflower, pumpkin)
1 teaspoon roasted flex seed powder (opt)
To serve with:
Nacho chips
Garlic bread
Method to make Home-Style Burrito Bowl with a Nacho Crunch:
- Soak rajma for minimum 5 to 6 hours in hot water. Pressure cook it. Add 1/4 teaspoon salt while coking. Keep a side.
- Make paneer from milk. Refrigerate it.
How to assemble:
- In a serving bowl add all ingredients excluding salsa and sour cream.
- Add crumbled paneer/small paneer cubes to it. Mix.
- Add required quantity of sour cream and salsa sauce as per taste.
- Mix well and at last add roughly crumbled nacho chips over it.
- Serve creamy and tangy Home style Burrito Bowl with Nachos and garlic bread.
Note:
- Adding mixed seeds and flex seeds powder is totally optional. I added it for extra health benefits.
