That’s why I wanted to create a dessert that feels incredibly indulgent but leaves you feeling light and refreshed: the Layered Mango Cake Tub. By pairing a fluffy, airy sponge with a delicately sweetened cream and an abundance of fresh, ripe mangoes along with finely sliced roasted nuts, this treat lets the natural sweetness of the fruit completely steal the show. Serves 4 person
Ingredients to make Mango Cake Tub:
1 big or 2 small ripe mangoes chopped
3 slices bread
1/4 cup low fat cream
300 to 400 ml mango shake
Finely sliced/chopped nuts as needed
1/4 cup mango puree
For creamy layer:
1/cup low fat cream
1 tablespoon caster sugar
For mango shake:
1 cup mangoes chopped
1 cup chilled milk
1 scoop vanilla icecream
1 tablespoon sugar
For garnishing:
Finely sliced/chopped roasted nuts
(Almonds, pistachio, cashews)
Method to make Mango Cake Tub:
For mango shake:
- Take all ingredients in mixer jar and churn.
- Strain it. Chill in refrigerator.
For Mango Cake Tub:
- Wash and chop ripe mangoes. (I took Alfonso, you can take your choice of mango. Bit alfanso and kesar mango are advisable. )
- Mix cream and sugar properly and chill it.
- In a transparent container make a thin layer of mangoes, mango puree and mango shake.
- Place a slice of bread over it and cover it with mango shake. (Make sure to remove sides of the bread. )
- Again make a layer of mango puree, mangoes and this time cover it with fresh cream. Sprinkle some nuts over it.
- Repeat the same with another bread two times.
- At last make a thin layer of cream on the top and cover it with Chopped mangoes.
- Garnish with nuts.
- Cover and allow to chill for minimum 3 to 4 hours in refrigerator.
- Our super delicious and creamy Mango Cake Tub is ready to serve. Always serve chilled dessert.
