Preparation time - 10 to 12 minutes
Cooking time - 5 to 7 minutes
Makes 2 tacos
Ingredients to make Zesty Palak Paneer Tacos with Charred Veggies:
For tacos:
1/2 cup refined flour
1 teaspoon sooji
1 tablespoon rice flour
Salt to taste
1 tablespoon oil
1 tablespoon ghee
2 to 3 tablespoon spinach puree
For stuffing:
1/2 cup paneer
1 tablespoon finely chopped onion
1 tablespoon finely chopped green capsicum
1 tablespoon finely chopped red bell peppers
1 tablespoon finely chopped yellow bell peppers
1 teaspoon boiled sweet corn (opt)
Salt to taste
1 teaspoon finely chopped green chillies
1/2 teaspoon chili flakes
1/2 teaspoon oregano
1/2 teaspoon freshly ground black pepper powder
To spread on tacos:
Onion, red, yellow and green bell peppers in slice cut
A pinch salt
A pinch black pepper powder
1/4 teaspoon oil
Oil for shallow frying
To serve with:
Green chutney
Tomato ketchup
Method to make Zesty Palak Paneer Tacos with Charred Veggies:
For tacos:
- Mix all ingredients of tacos in a broad vessel and make semi soft dough from it.
- Cover and rest for minimum 15 minutes.
- Knead and make balls from dough. Make soft roties from it. Keep a side to cool.
For stuffing:
- Wash and finely chop all vegetables. (I chopped in chopper.) Add grated paneer to it.
- Add all dry spices to it and mix well. You can also add finely chopped coriander leaves to it.
- Mix properly and make balls from it.
To spread on:
- Make thin slices from onion, and red, yellow and green bell peppers.
- In a small tadka pan add oil and saute sliced vegetables. Add salt and pepper powder to it.
- Keep a side.
How to assemble:
- Place stuffing ball on tavi and place a palak roti over it. Press gently.
- Apply oil and cook until light brown both sides.
- Repeat the same for remaining.
- Spread green chutney over paneer layer and spread sliced vegetables on it. You can spread a layer of grated cheese over it.
- Fold and serve hot. Repeat the same for remaining.
- Serve hot and tempting Zesty Palak Paneer Tacos with Charred Veggies with your choice of dip like tomato ketchup and green chutney.
