For many of us, it’s the ultimate comfort food—but let’s be honest, the heavy deep-frying and the lingering smell of oil in the kitchen can be a bit much for a casual Tuesday craving. Enter the Air Fryer Punjabi Samosa: all that authentic, street-style crunch and bold masala flavor we love, but with a fraction of the oil and zero guilt. Today, I’m showing you how to achieve that signature "khasta" (flaky) texture using your air fryer, so you can enjoy a hot plate of these savory triangles anytime the chai starts brewing.

Air Fryer time - 20 minutes/bach (approx.)
Ingredients to make Crispy Air Fryer Punjabi Samosas:
For outer layer:
2 cups refined flour
2 teaspoon sooji
2 tablespoons rice floor
2 tablespoons ghee
2 tablespoons oil
Salt to raste
1/4 teaspoon soda bi carb
For stuffing:
500 grams green peas
2 medium sized potato
2 medium sized onions
2 tablespoons oil
1 teaspoon cumin seeds
1/4 teaspoon asafotida
2 to 3 teaspoons finely chopped green chilies
2 teaspoons sesame seeds
2 tablespoons finely chopped minit leaves
2 tablespoons finely chopped coriander leaves
Salt to taste
1/2 teaspoon turmeric powder
2 tablespoons cumin coriander powder
1 teaspoon garam masala powder
1/2 teaspoon dry mango powder
2 tablespoons sugar
Hand full of chopped mint and coriander leaves for garnishing
Oil fir brushing
Dry rice floor for dusting
To Serve with:
Method to make Crispy Air Fryer Punjabi Samosas:
- In a mixing plate add all ingredients of outer layer and mix well. It will give you crumbly texture. If not add a spoon full of oil or ghee as per choice.
- Make semi smooth dought from it by adding water stage by stage.
- Knead property and keep a side covered for minimum 15 minutes.
For stuffing:
- Remove green peas seeds from green peas. Pressure cook green peas and potatoes. Let them cool at room temperature. (I prefer to cook them in holed vessel.) Remove skin from potato and chop them in small size.
- In a kadai/pan heat oil and add cumin seeds to it. Let them crackle.
- Add asafoetida, green chilies, turmeric powder, sesame seeds to it. Mix well.
- Add chopped onion to it and mix well. Cook for 2 minutes and then add chopped coriander leaves and mint leaves to it. Again cook for a minute. Add all remaining dry spices to it and mix well. Add cooked green peas and potatoes to it. Mix well. Cook for 2 minutes and transfer to broad vessel. Garnish with chopped coriander and mint.
- Let it cool completely.
How to assemble:
- Make equal sized balls from dough.
- Take a ball and roll medium thick roti from it. Cut from middle to make 2 halves. Take dry rice floor for dusting if needed.
- Apply water at the straight edge of half moon shaped roti. Stick them to make corn shape as shown in video. Fill a spoon full of stuffing in it . apply some water on another age. (Round)
- Seal it property. It will give you triangular samosa shape.
- Repeat the same for remaining.
- Heat air fryer for 3 minutes at 140 degree.
- Place Samosas in air fryer basket and brush them. I always use liner, you can also do so. It is not compulsory.
- Brush oil over samosa and cook for 10 minutes at 140 degree.
- Turn around and again cook for 10 to 12 minutes at 180 degrees.
- At this time you can adjust timing as per your choice. As I like little brown coloured samosa, so I cooked for 12 minutes. You can adjust timing as per choice.
- Remove from air fryer and brush oil if you wish.
- Repeat the same for remaining.
- Serve hot Crispy Air Fryer Punjabi Samosas with sweet chutney, green chutney and our special all in one chutney
