Creamy Zero-Oil Broccoli & Almond Soup: The Ultimate Winter Comfort Bowl


Preparation time - 5 minutes 

Cooking time - 10 to 12 minutes 

Makes - 2 servings

Ingredients to make Broccoli Almond Soup:

2 cups broccoli 

15 to 20 almonds 

1 big onion 

8 to 10 cloves garlic 

Salt to taste 

1/2 teaspoon freshly ground black pepper 

For garnishing:

Almond slices



Method to make Broccoli Almond Soup:

  • Soak almonds in warm water for minimum 15 minutes.
  • Wash and chop broccoli.
  • Peel onion, wash and chop. 
  • Peel garlic and wash. 
  • Remove skin from almonds. 
  • Add all ingredients in pressure cooker and boil them for 2 whistles after adding salt to it. Let it cool at room temperature. 
  • Churn it properly. I didn't strain as I like chunks of almonds, and didn't want to remove fibers. 
  • Transfer the contact to a non stick pan and allow it to boil. Add water to adjust consistency. 
  • At last add freshly ground black pepper powder. 
  • Our super delicious, super healthy broccoli almond soup is ready to serve. 
  • Transfer it to serving bowl and garnish with sliced almonds.
