Makes 2 sandwiches
Ingredients to make Layered Potato vegetable Sandwich Perfection:
For vegetables layer:
1/2 cucumber finely chopped
1 small tomato finely chopped
1/2 beetroot grated
1 small onion finely chopped
3 tablespoon finely chopped capsicum
For potato layer:
3 medium boiled potato
1 teaspoon oil
1/4 teaspoon cumin seeds
3 tablespoon finely chopped onion
1 teaspoon finely chopped green chillies
A pinch of turmeric powder
1/4 teaspoon roasted cumin powder
1/4 teaspoon garam masala powder
2 to 3 tablespoon chopped coriander leaves
For assembling Layered Potato vegetable Sandwich Perfection:
4 to 5 tablespoon butter
( I always use law fat butter)
2 to 3 tablespoon green chutney
2 to 3 tablespoon tomato ketchup

Method to make Layered Potato vegetable Sandwich Perfection:
For vegetable layer:
- Grate beetroot and keep a side.
- Chop all another vegetable in very small size.
For potato layer:
- Heat oil in a pan and add cumin seeds to it. Let them crackle, add green chilli and chopped onion to it.
- Mix well and cook for 2 minutes.
- Add all dry spices to it and again cook for one minute.
- Add mashed potato and mix properly.
- At last add finely chopped coriander leaves and mix well.
- Let it cool at room temperature.
How to assemble Layered Potato vegetable Sandwich Perfection:
- Place a bread on chopping board and apply butter and green chutney over it.
- Spread a layer of potato mixture over it.
- Place another bread over it and apply butter over it. Spread some tomato ketchup on it.
- Now spread all chopped and grated vegetables on that bread. Sprinkle some sandwich masala and place a slice of cheese or grated cheese over it. Taking cheese is totally optional. I did not use it but you can.
- Apply some green chutney over third bread slice and place it upside down on vegetable layer.
- Apply butter over last bread and place it in chipiya as we are grilling it in chipiya.
- Apply butter on bottom last bread and lock the chipiya.
- Cook at medium flame from both sides.
- When light brown in colour and crispy remove and cut the sandwich.
- Our hot, delicious and crispy Layered Potato vegetable Sandwich is ready to serve.
- Actually it doesn't require any dip as it tastes great without the dip.
- But you can serve it with tomato ketchup.
Tips:
- You can boil potatoes in microwave also, for that you need to place 3 potatoes in a microwave safe glass bowl. Add a spoon full of water to it and cover with a glass lid. Cook in microwave for 3 to 4 minutes. Rest it for 7 to 8 minutes, and check. If needed again cook for 30 seconds.
- You can use whole wheat/multigrain bread also.
- In stead of chopped and grated vegetables, you can use sliced vegetables. But personally as of my choice, chopped vegetables convenient.
