Preparation time - 5 minutes
Cooking time - 10 minutes
Serves - 2 persons
Ingredients to make Aaloo Baigan:
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon chopped green chillies
8 to 10 curry leaves
1 small tomato finely chopped
1/2 teaspoon asafoetida
1 teaspoon turmeric powder
1 cup chopped potatoes ( with skin)
You can remove the skin
1 cup chopped brinjal
Salt to taste
2 teaspoon kashmiri red chilli powder
1 teaspoon cumin coriander powder
1 tablespoon chopped jaggery
For garnishing:
Chopped coriander leaves
Method to make Aaloo Baigan:
- Wash and chop potato, brinjal and tomato.
- Heat oil in a pressure cooker and add mustard seeds and cumin seeds in it.
- When they crackles add asafoetida, curry leaves, turmeric powder, green chilli and chopped tomatoes to it. Mix well.
- Add chopped potatoes and brinjal to it. And then add salt to it. Mix well and add 1/4 cup water to it.
- Shut the lid and pressure cook for one whistle.
- Let it cool itself
- Open the lid and add remaining spices to it. Mix and again cook for 2 to 3 minutes.
- At last add chopped coriander to it.
- Our super healthy, home style Aaloo Baigan is ready to serve.
- Serve it piping hot with roti, paratha, puri etc.
- Even it tastes good with khichdi also.
- You can change the proportion of potato and brinjal as per your choice.
- You can add chopped onion also.
