Grilled Veggie Tortilla Sandwich


Ingredients to make Grilled Veg. Tortilla Sandwich:

2 tortillas - whole wheat
Butter as needed
2 cubes cheese
2 tablespoon tomato ketchup
2 tablespoon spicy mint-coriander chutney
2 tablespoon mayonnaise (opt.)
1 small cucumber thin sliced
1 tomato thin sliced
1 onion thin sliced
1 boiled potato sliced
1 boiled beetroot thin sliced
3 to 4 thin slices of red bell peppers
3 to 4 thin slices of yellow bell peppers
3 to 4 thin slices of green capsicum
1 tablespoon sandwich masala (as per taste)
1 tablespoon freshly ground black pepper
1 tablespoon chaat masala (as per taste)

Instructions to make Grilled Veggie Tortilla Sandwich:

Lay out the tortilla on a clean surface. Spread a generous dollop of butter over tortilla.
Make a mark over tortilla to create four equal parts virtually. Apply a thin layer of tomato ketchup over a part of tortilla. Arrange some of the sliced vegetable over it and sprinkle some chaat masala, sandwich masala & freshly ground black pepper powder over it.
Again spread a thin layer of mayonnaise over second layer and arrange some sliced vegetables over it. You can make a layer of grated cheese over it. At last sprinkle chaat masala, sandwich masala & black pepper powder over it. This process is totally optional.
Now spread a thin layer of spicy mint-coriander chutney over another layer, you can add some mayonnaise if you love creamier sandwich, otherwise avoid it. At last arrange slices of vegetables over it and sprinkle masalas as above for an extra burst of flavour.
Carefully fold each tortilla in half, creating a triangular sandwich shape.
Apply some butter over both the surfaces before grilling.
Carefully place the sandwich in grill maker for extra crisp until they are nicely toasted and the cheese begins to melt.
Remove from grill maker and enjoy hot, spicy and cheesy Grilled Veggie Tortilla Sandwich with tomato ketchup and along with a sip of your favourite healthy juice.

Note:

You can use your choice of vegetables.
Instead of ready-made tortillas you can use leftover whole wheat roti to make it healthier.
