Creamy Tomato Soup

Preparation time - 10 minutes
Cooking time - 15 minutes
Serves – 4 person

Ingredients to make Creamy Tomato Soup:

500 grams tomatoes
1 onion chopped
2 small carrot chopped
2 tablespoon roughly chopped mint leaves
Water as needed
Salt to taste
1 tablespoon butter
1 tablespoon oil
¼ teaspoon cumin seeds
2 to 4 cloves minced garlic
1 tablespoon corn flour
1 tablespoon Sugar
1 teaspoon freshly ground black pepper powder
1 tablespoon fresh cream

For garnishing:

Cream

For serving:

Bread sticks
Bread croutons

Method to make Creamy Tomato Soup:

·       Heat butter and oil in a pen, add cumin seeds and let them crackles. Now fry onion and carrot in it for 2 minutes.

·       Now it’s time to add mint leaves, garlic & chopped tomatoes to it.

·       Now add salt & pepper powder to it. Sauté until tomatoes are soft.

·       Add required water to it. Pressure cook the mixture.

·       Rest until cool. Now churn the mixture & strain it.

·       Let it boil again, at this time add corn flour slurry to it as a thickening agent. Boil for 3 to 4 minutes. At last add sugar and cook for 2 to 3 minutes. At last add fresh cream & mix well.

·       Taste the soup and adjust the seasoning if needed. If the consistency is too thick, you can add a little more water to achieve your desired thickness.

·       Ladle the creamy tomato soup into bowls, and garnish each serving with fresh cream.

·       Serve with croutons or bread sticks on the side for dipping and extra texture.

Creamy Tomato Soup Tips:

·       You can also add potatoes to cut the sourness of tomatoes.

·       Even a small piece of bottle gourd can also added to make it healthier.
