Palak Patta Chat recipe
As we all know chat is an umbrella term for a wide range of roadside food. It usually feature some spicy, tangy, sweet or salty flavor. It is said that chat origins from Uttar Pradesh. From then chat becomes immensely popular in rest of India. In India chat is a word that describes more than just a food/snacks. This food category hits practically every element that makes something craveable may be sweet, sour, tangy, spicy, and crunchy. Chat can be enjoyed anytime anywhere.
Today we are going to prepare the recipe of Palak Patta Chat. It is a very simple recipe. You just need to make palak fritters. And rest is a delicious party. You need to spread whisk curd, different types of chutneys & selected farsan over it make it mouthwatering & beautiful. Makes 4 to 5 servings of 2 friters
Ingredients to make Palak Patta Chat:
For palak fritters:
8 to 10 palak leaves (small to medium size)
¾ cup besan – gram flour
3 tablespoon rice flour
A pinch soda bi carb (opt.)
¼ teaspoon turmeric powder
Salt to taste
Oil for frying
For making chat:
Sweet chutney
Green chutney
Garlic chutney (opt.)
Whisked curd
For crunchy garnishing:
Besan sev
Pomegranate seeds
Finely chopped onion
Besan bundi
Freshly chopped coriander leaves
Finely chopped de-seeded tomatoes
Method to make Palak Patta Chat:
For fritters:
• Wash and palak/spinach leaves and make them dry with soft cloth. Keep a side.
• In a sauce pan add besan, rice flour and all dry spices. Mix well.
• Make semi thick batter by adding water. Whisk it for 2 to 3 minutes.
• Heat oil in a pan.
• Dip spinach leaves in batter and slowly fry them in hot oil until crisp.
• When ready remove & drain on absorbent kitchen tissue.
• Keep a side.
How to assemble:
• In a serving plate place a palak fritter and spread all three chutneys over it. Place some drops of whisk curd over it.
• Now it’s time to sprinkle sev, onion, tomato, bundi and coriander leaves over it. Make another layer of palak fritter over it and repeat the same process for it.
• Sprinkle some chat masala over it.
Cool and crispy palak patta chat is ready to serve.
Tips:
• If you want to fry palak fritters early then place them in preheated oven to avoid sogginess.
• Try to serve it as soon as possible.
