This is a new version of crispy and crunchy sev puri in shot glass. Normally sev puri is served in a plate. But in this recipe we are going to make different layers of chutneys & whisk curd in a shot glass. You only need to dip crispy papdi in it and enjoy. No worries about dirty hands.
Basically this is a different serving style for sev puri. All the topping material is placed in a shot glass to make different layers. Even you can use small bowls for serving dips, but it will not make separate layers as shot glass. And papdis are served separately. But mind well the taste will remain same as sev puri. For Crispies:
1 cup refined flour
2 tablespoon semolina
1 1/2 tablespoon ghee
1 1/2 tablespoon oil
Salt to taste
1/2 teaspoon roasted cumin powder (roughly crushed)
1/2tea spoon black pepper powder (roughly crushed)
Oil for frying
For dip:
2 boiled and chopped potatoes
Sweet chutney
Green chutney
Garlic chutney
Whisk curd
Besan sev
Pomegranate seeds
Sweet chutney

Freshly chopped coriander leaves

Method to make Sev Puri Dip:
For crispies:
- In a mixing bowl add all ingredients of crispies and make semi soft dough with the help of water.
- Keep a side covered for 10 minutes.
- Knead well and make small balls from it. Rol semi thick puries from it and prick them with fork or knife.
- Heat oil in a pan and dip fry puries in it until crisp.
- Drain over kitchen tissue. Store them in an air tight container.
How to serve:
- In a shot glass make a small layer of chopped boiled potatoes.
- Make a thin layer of sweet chutney over it, then make different layers of green chutney & garlic chutney over it.
- Make semi thick layer of whisked curd over it. Sprinkle some chat masala over it.
- Now its time to sprinkle some sev, bundi, pomegranate seeds over it. Repeat the another layer of deep by repeating the same process.
- Garnish with finely chopped coriander leaves.
Cool and crispy sev puri dip is ready to serve.
Tips:
- You can bake crispies instead of frying.
- Layer thickness can be adjusted as per taste.
