Quick and Easy Fenugreek - Methi Khandvi in Pressure Cooker

Recipe by Naiya Sheth: Earlier we made two types of Khandvi, one was Khandvi in the microwave and then another was Khandvi in the pressure cooker. Personally, I like the second method. So few days bake I tried to make Khandvi with my all-time favorite fenugreek leaves. And the result was awesome. As I followed the pressure cooker method, it was little bit easy and no need to stir. Means no constant attention. So let's try this super delicious, healthy Gujarati recipe of Quick and Easy Fenugreek / Methi Khandvi in Pressure Cooker.




Preparation time - 5 to 7 minutes
Cooking time - 10 to 15 minutes

Ingredients to make Khandvi Easily:

1 cup gram flour
1 tablespoon freshly chopped fenugreek leaves
or 1 teaspoon kasuri methi
1/2 cup curd
1 1/2 cup water
Salt to taste
A pinch turmeric powder
1 tablespoon chopped green chilies
1 teaspoon crushed ginger

For tempering: 

1 tablespoon oil
1 teaspoon mustard seeds 
1 teaspoon sesame seeds
A pinch asafoetida

For garnishing:

Chopped coriander 
Red chili powder

Method to make Khandvi Easily: 



 

  • Mix all ingredients in a big bowl and blend properly.
  • Place it in a pressure cooker and allow to blow 8 whistles.
  • Give rest for 2 to 3 minutes and then release hot air from the pressure cooker.

  • Mix properly, and place carefully over a thick plastic sheet, cover with another plastic sheet. Roll with rolling pin. Try to spread a thin layer.
  • Cut and roll them. 
  • Place them on a serving plate and sprinkle some red chili powder over it.

For tempering: 

  • Heat oil in a pan and add mustard seeds to it. When it crackles add sesame seeds and asafoetida to it. Mix well and pour over placed khandvi. 
  • Garnish with chopped coriander leaves.
  • Delicious Khandvi is ready to serve.
