How to Make Double Cheese Crispy Pasta

Normally kids love cheese, lots of cheese. So here it's a home made the recipe of double cheese crispy pasta. I think this is a smart trick to give different vegetables to kids with lots of cheese.In this recipe, I tried to add more and more vegetables to make it healthy and colourful. Vegetables add vitamins and cheese add calcium to this recipe. In earlier recipe we tried to make pasta, in that recipe, there was a small quantity of cheese to avoid fat. But in this recipe, it is just to attract kids. So try and enjoy the recipe of double cheese crispy pasta.

Preparation time - 15 minutes
Cooking time - 20 to 25 minutes
Serves - 4 person

Ingredients to make Double cheese Crispy pasta:

2 cups pasta
I prefer semolina - sooji pasta
2 to 3 tablespoon butter or olive oil
2 onion sliced
2 carrots steamed and diamond cut
1 cup capsicums diamond cut (red, green and yellow)
1/4 cup steamed baby corn
1/2 cup french beans diamond cut
1 tomato diamond cut
1 cup thick white sauce
1 cup tomato puree
1 tablespoon chilli flacks
1 tablespoon oregano
1 teaspoon black pepper powder
Salt to taste
1 tablespoon sugar
2 to 3 tablespoon tomato ketchup
2 to 3 tablespoon cheese spread
1 tablespoon red chilli powder

For garnishing:

Process cheese
Cheese biscuits
(Roughly crushed)

Method to make Double Cheese Crispy Pasta:

  • Boil pasta as the normal method.
  • Drain and keep aside.
  • In a pan heat 1 tablespoon butter or olive oil, add onion slice and cook for 2 minutes. Now add capsicum, carrots, baby corn and saute for 2 to 3 minutes at a fast flame. Add salt, black pepper powder, chilli flacks and oregano to it, mix well. Keep aside.
  • In another pan again heat remaining oil or butter and add white sauce to it, add tomato puree and mix well. Cook for 2 minutes and then add red chilli powder, sugar, cheese spread and tomato puree to it. Mix well and cook for 2 minutes.
  • Now add above vegetable mixture to it and mix well.
  • Transfer it to the baking dish and cover with grated cheese. At last, spread roughly crushed cheese biscuits to it and cook for 2 minutes in a microwave or for 5 to 7 minutes in O.T.G. at 150`c temperature.
  • At the time of serving sprinkle some chilli flacks and oregano if needed.
  • Serve Double Cheese Crispy Pasta piping hot.
