This is a very easy and healthy Indian food recipe. Handvo can be known as spicy Indian cake. Actually, I always make it in O.T.G. Means it's really Indian version of the cake. It is very healthy and yummy. Yes, it requires some planning and soaking time, but the result is very good. Handvo is a mixture of lots of flours, vegetables and spices. In short, it's a great combination of health and taste. It can be served as the starter, snacks, breakfast and even as single meal dinner also.

Preparation time - 15 to 20 minutes
Fermenting time - 6 to 7 hours
Baking time - 55 to 60 minutes
Serves - 6 person
Ingredients to make OTG Baked Vegetable Handvo:
For fermentation:
200 grams handva flour
200 grams yellow corn flour
200 grams Idli batter
1/2 tablespoon citric acid
1/2 tablespoon soda bi carb
For Handvo:
1 cup chopped cabbage
1 chopped carrot
1/4 cup fresh sweet corn
1 cup chopped bottle groud
3 tablespoon crushed green peas (opt)
Salt to taste
2 tablespoon crushed green chillies
1 teaspoon ginger paste
1 teaspoon turmeric powder
2 teaspoon red chilli powder
4 tablespoon sugar
1 tablespoon fruit salt
Oil for greasing oven tray
For tempering:
3 tablespoon oil
1 tablespoon mustard seeds
2 tablespoon sesame seeds
1/2 teaspoon asafoetida
1 tablespoon red chilli powder
To serve with:
Oil
Tomato ketchupMethod to make Handvo:
For fermenting:
- Heat water in a pan, add citric acid to it. Remove from flame and add soda bi carb to it. Mix well.
- Add idli batter, yellow corn flour, and handva flour to it.
- Make the semi-liquid batter and put it in the warm place for 6 to 7 hours covered. You can place it in OTG itself when it is off.
For handvo:
- Preheat O.t.G. AT 300`C (maximum) with both top and bottom grill on.
- Chop all vegetables in chopper. It will give crunch to your handvo.
- Crush sweet corn to smooth paste.
- Mix all spices and vegetables to the fermented handvo batter.
- mix well. sprinkle soda bi carb over the batter.
- Appl oil on the oven tray.
- Mean while prepare tempering on othe side.
- For that heat oil in a pan and add mustard seeds. When they crackle add asafoetida, sesame seeds and red chilli powder.
- Add half of hot tadka over the ready batter. Mix well.
- Pour the batter in oven tray. I used overn safe glass baking dish. You can also use aluminium tray
- Make sure to full 3/4 portion of the tray. Spread remaining tadka over the batter in oven tray.
- Bake for 55 to 60 minutes at 300` temp. or till upper layer is crispy.
- Hot and delicious handvo is ready to serve. Traditionally it is served with oil. But now it can be served with tomato ketchup and green chutney.
Tips:
- Ready-made idli batter should be used but if it is not available idli flour or homemade idli batter can be used.
- For handva flour also it can be available at grocery shop but it can be made at home by mixing 1 cup rice, 1/4 cup toovar dal and 2 tablespoon chanadal's (gram dal) coarse mixture.
- You can add or omit your choice of vegetables.
