Ingredients to make Corn Capsicum Poha:
2 cups thick poha
2 to 3 table spoon oil
1 big onion finely chopped
1/2 cup boiled sweet corn
1/4 cup finely chopped red capsicum
1/4 cup finely chopped green capsicum
1 big potato boiled and chopped
3 to 4 green chillies finely chopped
Salt to taste
3 table spoon boiled green peas
1/2 tea spoon turmeric powder
1 table spoon cashew nuts pieces
1 table spoon raisins
1 tea spoon mustard seeds
8 to 10 curry leaves
Juice of 1 lemon
2 to 3 table spoon oil

1/4 cup finely chopped red capsicum
1/4 cup finely chopped green capsicum
1 big potato boiled and chopped
3 to 4 green chillies finely chopped
Salt to taste
3 table spoon boiled green peas
1/2 tea spoon turmeric powder
1 table spoon cashew nuts pieces
1 table spoon raisins
1 tea spoon mustard seeds
8 to 10 curry leaves
Juice of 1 lemon
For garnishing:
Finely chopped coriander
Roasted cashews
Roasted almonds
Pomegranate seeds
Method to make Corn Capsicum Poha:
- Wash and soak poha for 10 minutes. Remove excess water from it.
- In a pan heat oil and add mustard seeds to it. When they crackles add curry leaves and chopped green chillies.
- Add onion and cook till light brown. Add cashews and resins. Now add boiled sweet corn, capsicum and green peas.
- Cook for 2 minutes. Mean while add salt, turmeric powder and lemon juice to soaked poha. Mix well.
- Add poha mixture to pan and mix well.
- Sprinkle some water if needed.
- Garnish with coriander leaves, cashews, almonds and pomegranate seeds.
- Hot, healthy and colourful Corn capsicum Poha is ready to serve.
