Sev Usal recipe
Sev Usal is a very popular Gujarati street food recipe. I think you must heard about Maharashtra’s popular recipe Usal. But this is sev usal, it is made of dry white/green peas. Normally it is served with sev, onion, different types of chutneys, crunchy farsan & bun.
It is said that sav usal is a very famous street food from Vadodara. It can be considered as a chat also. It is a great treat with a blast of flavors. It can be served as a single meal dinner as well as any time snack. It can be a great treat for kitty parties, birthday parties, family get together etc.
As I mention above it can be served two different ways. It can be served with bun & also can be served as a chat with different types of tempting chutneys. Basically for sev usal we need to make ragda. So let’s have a look at the recipe of sev usal. Enjoy cooking!

Serves 4 person
Ingredients to make Sev Usal:
2 cups soaked white peas
2 tablespoon oil
1 teaspoon cumin seeds (jeera)
¼ teaspoon asafoetida (Hing)
1 medium onion chopped
1 tablespoon chopped garlic
1 tablespoon chopped ginger
2 to 3 green chilies chopped
2 small tomatoes chopped
Salt to taste
1 tablespoon red chili powder (I used Kashmiri red chili powder)
1 teaspoon turmeric powder
1 tablespoon cumin coriander powder (dhaniya jeera powder)
1 tablespoon jaggery (opt.)
For garlic tari:
1 tablespoon oil
2 tablespoon red chili powder
Salt to taste
3 to 4 tablespoon crushed garlic
For garnishing:
Sweet chutney
Green Chutney
Garlic Chutney
Finely chopped onion
Finely chopped tomato
Freshly chopped coriander leaves
Sev
To serve with:
Ladi pav
Method to make Sev Usal:
• Wash and soak white peas in hot water for 6 to 7 hours.
• Pressure cook them by adding little salt and required water.
• In a chopper add onion, green chilies, ginger & garlic. Chop them to make rough paste.
• Add tomatoes to chopper & make rough paste from them.
• In a pan heat oil and add cumin seeds. Now it’s time to add onion mixture and hing to it. Sauté at medium flame for 2 minutes or until it is cooked properly. Add tomato paste and again cook until it releases the oil.
• Add all dry spices to it and again cook for one to 2 minutes at slow flame.
• Add boiled peas, make sure to add water from pressure cooker.
• Cook covered for 5 to 7 minutes at medium flame.
• Add water to adjust consistency.
• When ready transfer to serving bowl and add desire amount of chutney as per taste. Add garlic tari if required.
• Garnish with sev, tomato, onion & coriander.
• Serve hot Sev Usal with ladi pav.
For extra spicy garlic tari:
• Heat oil in a tempering pan and add garlic to it, saute for few minutes at slow flame. Shut the flame.
• Add salt and red chili powder to it. Mix well.
Tips:
• In case white peas is not available, green peas can be used.
• Instead of rough paste of onion & tomatoes you can use fine paste or chopped one also.
• It can be served as a chat also, in that case you need to garnish with fried farsan also. In that case ladi pav is not required.
