How to Make Ragda Patties

Learn how to make Ragda Patties. This is a homemade recipe for all time favourite street food, ragda patties. It's a healthy combination of potato patties with dried green or white peas. This is a healthy version of patties because it is full of vegetables and non-fried. This patty can be served individually with sweet and green chutney and sev. But it gives an amazing taste with peas ragda. This can be served as a single menu for dinner. Ragda Patties is a stomach filling snack also. One who wants to avoid dinner this can be a perfect choice.





Preparation time - 20 minutes
Cooking time - 35 to 40 minutes
Serves - 4 person


Ingredients to make Ragda Patties:


For patties:


3 to 4 boiled and mashed potatoes (approx. 2 cups)
2 tablespoon finely chopped onion
2 tablespoon finely chopped capsicum
2 tablespoon finely chopped cabbage
2 tablespoon grated carrot
5 to 6 finely chopped green chillies
2 tablespoon finely chopped coriander leaves
1/2 teaspoon grated ginger
Salt to taste
1 tablespoon sugar
1/2 lemon juice
Dry bread crumbs for binding
Oil for shallow frying




For Ragda:


1 cup dry green or white peas - soaked
1 tablespoon oil
1 teaspoon cumin seeds
1 onion finely chopped
1 teaspoon garlic paste
1 teaspoon ginger paste
4 to 5 green chillies finely chopped
Salt to taste
1 teaspoon turmeric powder
1 tablespoon red chilli powder
1/2 tablespoon cumin seeds powder 
1/2 tablespoon dry coriander powder
1 tablespoon tomato sauce
1 tablespoon jaggery 
1 teaspoon lemon juice
1 small tomato finely chopped
1/4 cup finely chopped coriander leaves


To serve with:


Sweet chutney
sev
finely chopped onion
finely chopped coriander


Method to make Ragda Patties:


For Patties:
  • Mix all the ingredients in a big mixing bowl and add spices to it.
  • Make medium size balls from it and give them flat patties shape.
  • Shallow fry patties on a non-stick griddle - tavi at medium flame. Cook till they are light brown. 
For Ragda:
  • Soak peas for 5 to 6 hours in warm water. Drain water and add another fresh water in pressure cooker (approx. 2 cups). Cook them in a pressure cooker till 3 whistles by adding salt. Let it cool at room temp.
  • Heat oil in a pan and add cumin seeds to it. When it crackles add green chillies, ginger paste and garlic paste. Cook for 1 minutes, add onion and let it cook for 2 minutes.
  • Now add boiled peas and all dry spices to it. 
  • Add tomatoes, tomato sauce, lemon juice and jaggery.
  • Let it cook till boiling temp.
  • Add coriander leaves.
How to assemble:
  • Place 2 patties on a serving plate and cover it with piping hot ragda. 
  • Garnish with sweet chutney, sev, onion and coriander.
  • Hot and healthy Ragda patties are ready to serve.
