Serves - 2 person
Ingredients to make Paneer bhurji in microwave:

tablespoon oil
1 tablespoon ghee – clarified butter
½ teaspoon cumin seeds
1 finely chopped medium onion
1 finely chopped medium tomato
1 teaspoon crushed green chili
½ teaspoon ginger paste
½ teaspoon garlic paste
½ teaspoon turmeric powder
1 teaspoon Kashmiri red chili powder
½ teaspoon curry powder
½ teaspoon kasuri methi – dry fenugreek leaves
200 grams crumbled paneer
Salt to taste
1 tablespoon cream
For garnishing:
Freshly chopped coriander leaves
Method to make Paneer Bhurji in microwave:
· Before starting cooking process, let’s finely chop the onion,
tomato and green chili. Crumble the paneer into small pieces and set aside. If
you don't have pre-crumbled paneer, you can grate it or mash it with a fork,
even I often crumble it in chopper also and it gives perfect result. This
process is essential for quick and hassle free cooking.
· In a microwave-safe bowl, add oil, ghee and cumin seeds. Microwave
on high for 30 seconds to temper the oil and release the cumin's aroma.
Carefully remove the bowl from the microwave (it may be hot) and add the
chopped onions. Mix well and microwave on high for 3-4 minutes, stirring
halfway through, until the onions turn translucent.
· Now stir in the ginger and garlic paste along with the chopped
green chilies. Microwave them on high temp. for another 1 minute to let the
flavours meld.
· Add the chopped tomatoes, turmeric powder, red chili powder, salt
and other dry spices. Mix well and microwave on high for 4-5 minutes, stirring
occasionally until the tomatoes become soft and the fat starts to separate from
the mixture. At this stage add roughly crushed kasuri methi and cream and mix
well.
· Now it’s time to add the crumbled paneer to the tomato-spice
mixture. Gently stir everything together to ensure the paneer is coated with
the flavourful spices. Microwave on high for 2-3 minutes, allowing the paneer
to absorb the flavours.
· Garnish with fresh coriander leaves & fresh cream. Give it a
final stir, and your Microwave Paneer Bhurji is ready to be served!
· Serve hot with chapati, paratha, or as a filling in sandwiches or
wraps. It also pairs well with steamed rice or jeera rice for a wholesome meal.
