Instructions to make Paneer Jalfrezi:
For Marinating Paneer:
In a mixing bowl, combine the cubed paneer with red chili
powder, turmeric powder, salt and 1 tablespoon of oil. Gently toss to coat the
paneer evenly with the spices. Allow it to marinate for at least 15-20 minutes.
Heat a pan or skillet over medium-high heat and add a little oil. Once the oil
is hot, add the marinated paneer cubes. Sear them until they turn golden brown
on all sides. Remove the paneer from the pan and set it aside.
For the Jalfrezi Sauce:
In the same pan, add 2 tablespoons of vegetable oil. When
the oil is hot, add mustard seeds and let them splutter.
Add sliced onions and green chilies. Sauté until the onions become translucent.
Add the sliced bell peppers, carrots, and green peas. Cook for 5-7 minutes
until the vegetables start to soften.
Stir in ginger-garlic paste and cook for another 2 minutes until the raw aroma
disappears.
Add cumin powder, coriander powder, garam masala, paprika (if using), salt and
freshly ground black pepper. Mix well and sauté for a couple of minutes until
the spices are fragrant.
Add chopped tomatoes, tomato ketchup and tomato puree. Cook for 5-7 minutes
until the tomatoes break down and the sauce thickens.
Gently stir in the seared paneer cubes and cook for another 2-3 minutes until
the paneer is heated through.
If the sauce seems too thick add some water and simmer for a few more minutes
until you achieve the desired consistency.
Garnish your Paneer Jalfrezi with fresh coriander leaves.
Serve hot with steamed rice or Indian bread like naan or roti.
