Upma recipe
Upma is a wholesome Indian dish. It is also known as uppumavu or uppittu. It is originating from the Indian subcontinent, most common in Kerala, Andhra Pradesh, Tamil Nadu, Telangana, Karnataka, Maharashtria and Sri Lankan Tamil breakfast. It is made from dry semolina. It is an excellent food for weight loss, as it digests slowly & gives the feeling of fullness. It is a nutrient-packed meal with the goodness of vitamins & minerals. So, it is suggested to have Upma for weight loss.
It is made from sooji/suji that is also known as cream of wheat/semolina. Basically it sooji is a simple granulated wheat. In North India it is known as Suji ka Upma as a popular breakfast food.
Making this recipe is not rocket science. It is a simple yet delicious food. Even you can have it as a light dinner also. A well-cooked Upma is delicious, fluffy & non-sticky with the rich flavors of curry leaves, green chilies, mustard & roasted urad dal. It contains sooji, it is a source of instant energy & iron. It supports nervous system. It is good for heart health also. This diabetic friendly food is antioxidant rich. Today we are going to make pure authentic style Upma. It can be made healthier by adding lots of colorful vegetables.

Serves – 4 person
Ingredients to make Upma:
2 tablespoon oil
1 tablespoon mustard seeds (rai)
1 tablespoon broken cashews
1 tablespoon peanuts
15 to 20 fresh washed curry leaves
1 tablespoon urad dal
1 tablespoon finely chopped green chilies
2 tablespoon finely chopped onion
2 tablespoon finely chopped capsicum
2 tablespoon boiled sweet corn
2 tablespoon boiled green peas
2 tablespoon chopped & boiled carrot
2 cups sooji/semolina
1 cup whipped curd
3 cups water
Salt to taste
For ganishing:
Freshly chopped coriander leaves
Method to make Upma:
• Heat oil in a pan. Add mustard seeds to it. When they crackles add peanuts, cashews & at last urad dal.
• Let them turn light brown in color. Now it’s time to add curry leaves & green chilies. Add onion to it and cook for 2 minutes & then add all vegetables to it.
• Sauté for 30 seconds and then add semolina/sooji to it. Stir continuously to roast it at medium flame. Let it roast till light brown in color.
• Meanwhile mix curd & water in a separate vessel & add salt to it. Stir to dissolve salt.
• Add above mixture to roasted sooji. Mixer should be added in parts to avoid getting lumps. Make sure to put flame low. Mix well.
• Let sooji absorb water. It will be fluffy and non-sticky after cooking.
• Hot, healthy yet delicious Upma is ready to serve. Garnish with chopped coriander leaves before serving.
Tips:
• Try to choose granulated sooji for making upma. It will give better result in compare to fine sooji.
• Always roast sooji at medium flame by stirring constantly until it changes its color. Because if sooji is not roasted properly, it will become sticky.
• You can add or omit your choice of vegetables.
Even it tastes good without vegetables also, but I added vegetables to make it healthier.
