Minestrone Soup

Recipe by Naiya Sheth: Learn how to make delicious and healthy soup recipe. Minestrone soup is a good combination of test and health. As it contains lots of vegetables it is good for health conscious people. Because it is a low cal. diet food.
Serves - 10 
Preparation time - 10 minutes
Cooking time - 15 minutes 



Ingredients to make Minestrone Soup:





Salad oil or olive oil
:
¼ cup
Finely chopped onion
:
½ cup
Finely chopped carrot
:
½ cup
Finely chopped cabbage
:
½ cup
Boiled macaroni
:
1 cup
Boiled green peas
:
¼ cup
Tomato
:
2 kilo
Crushed garlic
:
1 table spoon
Water
:
7 – 8 cups
Salt, black pepper powder and chilly sauce
:
As per test
Sugar
:
2 table spoon
Corn flour
:
2 table spoon
Grated cheese
:
1 – 1 ½ cup
Mint leaves
:
For garnishing

Method to make Minestrone Soup:

  1. Fry onion in hot oil, after 2 - 3 minutes add garlic pest and then add carrot let it cook for a minute, then add salt and black pepper powder, and cabbage also mix well. Now pour 4 glasses of water and let it boil. Make sure that vegetables are not over cooked.
  2. In other vessel cook tomatoes in remaining water, crush and strain it.
  3. Mix tomato juice in boiled vegetable's mixture.
  4. Now add corn flour slurry, 1 cup of cheese, green peas and boiled macaroni and chilly sauce in it .
  5. Boil till cheese melts.
  6. Garnish with gated cheese and mint leaves and serve hot minestrone soup with bread or starter.
