Hara Bhara Kabab recipe

spinach and other aromatic spices. These vegetarian kababs are perfect for

Ingredients to make Hara Bhara Kabab:
For the kabab mixture:
2 cups fresh spinach leaves, washed & finely chopped
2 medium-sized potatoes, boiled and grated
1/2 cup bread crumbs (as per requirement)
1/4 cup finely chopped coriander leaves
2-3 green chilies, finely chopped ( I used spicy one)
1 tablespoon ginger-garlic paste
1 teaspoon garam masala (opt)
Salt to taste
Oil for shallow frying
Broken cashews as needed
Chaat masala to sprinkle
Instructions to make Hara Bhara Kabab:
Blanch the Spinach:
Boil a pot of water and blanch the chopped spinach for
2-3 minutes. Drain and immediately immerse it in cold water to retain the
vibrant green colour. Squeeze out excess water and set aside to cool properly.
Prepare the Kabab Mixture:
In a large mixing bowl, combine the boiled and mashed
potatoes, blanched spinach, bread crumbs, chopped coriander and mint leaves,
green chilies, ginger-garlic paste, garam masala and salt. Mix everything well
to form a uniform mixture.
Shape the Kababs:
Grease your hands with a little oil to prevent sticking.
Take a small portion of the mixture and shape it into a flat, round patty.
Repeat this process for the remaining mixture. Place a piece of cashew over
each kabab.
Heat oil in a shallow frying pan over medium heat. Once the oil is hot, place
the kababs gently into the pan. Shallow fry them until they turn golden brown
and crispy on both sides. Make sure to flip them carefully to maintain their
shape.
Serve and Enjoy:
Drain excess oil on paper towels. Sprinkle some chaat
masala over it and serve hot with spicy mint coriander chutney or ketchup.
These Hara Bhara Kababs are best enjoyed when they are crisp on the outside and
soft on the inside.
Tips:
You can also bake these kababs in the oven for a
healthier version. Preheat the oven to 375°F (190°C) and bake them until they
turn golden brown, flipping them halfway through. Adjust the spice level by
adding or reducing the number of green chilies.
You can prepare the mixture in advance and refrigerate it. Shape and fry the
kababs when needed.
