Preparation time - 10 minutes
Cooking time in microwave - 8 to 10 minutes
Serves - 2 persons
Ingredients to make Perfectly Cooked, Spiced Indian Stuffed Veggies in Microwave:
1 1/2 tablespoon oil
200 grams baby potato
100 gram small brinjal
2 small onions
For bharwa masala/stuffing:
2 tablespoon roasted and skinless peanuts
2 tablespoon sesame seeds
2 to 3 spicy green chillies
A hand full of coriander
3 to 4 tablespoon slightly roasted gram flour
Salt to taste
2 teaspoon kashmiri red chilli powder
1 teaspoon turmeric powder
1 tablespoon cumin coriander powder
1/4 teaspoon garam masala powder
1 teaspoon roasted cumin powder
2 tablespoon powder sugar
2 tablespoon oil
Method to make Perfectly Cooked, Spiced Indian Stuffed Veggies in Microwave:
- First of all wash potatoes and brinjal. Remove skin of potato and onion.
- Make a single cut on both sides of vegetables. Keep them a side.
For stuffing:
- Take peanuts, sesame seeds, green chilies and coriander in a mixture jar. Crush them semi coarse.
- Transfer it in a plate and add all ingredients of stuffing to it. Mix well.
- At last add oil and mix properly.
How to cook:
- Stuff all brinjal with above stuffing carefully and place them in a microwave safe glass bowl. Add 1/2 tablespoon oil in it and stir. Cover with glass plate and cook in microwave for around 3 minutes. Keep a side covered for minimum 5 minutes.
- Same way stuff potatoes and place them on another microwave safe glass bowl. Add one tablespoon oil to it and mix. Cover with glass plate. Cook for minimum 4 minutes and then rest for 5 minutes. Add stuffed onion to it and again cook for 2 minutes covered as onion takes less time in cooking. Rest for 2 minutes. Check all vegetables as they are cooked or not. If not cooked cook for 30 seconds.
- Serve piping hot Perfectly Cooked, Spiced Indian Stuffed Veggies are ready to serve.
- Serve it with Indian bread - phulka roti.
