A taste of tradition - Sukhdi
Sukhdi is also known as Gud Papdi or Gol Papdi. It is a
delightful and wholesome Indian dessert that holds a special place in the
hearts of many. With its simple ingredients and rich flavours, Sukhdi brings
back memories of grandma's kitchen and traditional festivities.

Ingredients to make Sukhdi:
¾ cup ghee – clarified butter
1 cup whole wheat flour
¾ cup jaggery (finely chopped)
¼ cup coarsely crushed/chopped roasted almonds & pistachio
Ghee for greasing
For garnishing:
Sliced almonds
Sliced pistachio
Method to make Sukhdi:
In a heavy-bottomed pan, heat ghee and add wheat flour to
it. Roast it at slow flame until the flour starts releasing a pleasant aroma
and turns slightly brown in colour. This step will take around 8-10 minutes.
Remove the pan from the heat and then add chopped jaggery to it. Mix everything
thoroughly, ensuring there are no lumps. The mixture will come together to form
a crumbly texture. Make sure to stir quickly this time.
Add the coarsely crushed almonds and cashews to the mixture. These nuts add a
delightful crunch and nutty flavour to the Sukhdi.
Grease a flat plate or tray with a little ghee. This will prevent the Sukhdi
from sticking to the surface. Transfer the mixture onto the greased plate and
press it gently with the back of a spoon or spatula. You can also use your
fingers to shape the mixture evenly. But be careful while doing it with fingers
as the mixture is hot.
Sprinkle sliced almonds & pistachio over it and gently press it. While the
mixture is still warm, use a knife to cut it into your desired shapes -
usually, square or diamond shapes are traditional.
Allow the Sukhdi to cool and set completely for about an hour. It will solidify
as it cools down.
Once the Sukhdi has set, gently separate the pieces along the pre-cut lines.
Serve this delectable treat to your family and friends, and relish the blend of
flavours and textures.
