Veg. Masala Khichdi

Preparation time - 10 minutes 

Cooking time - 15 minutes 

Serves - 2 person 

Ingredients to make veg. Masala Khichdi:

For khichdi:

1/4 cup rice

2 tablespoon yellow moong dal 

2 tablespoon masoor dal 

2 tablespoon chana dal 

2 tablespoon toor dal 

2 tablespoon urad dal 

1 teaspoon ghee 

Salt to taste 

1/4 teaspoon turmeric powder 

A pinch of asafoetida 

For tadka:

2 tablespoon oil

2 tablespoon ghee 

1 teaspoon mustard seeds 

1/4 teaspoon asafoetida 

1/2 teaspoon turmeric powder 

2 tablespoon kashmiri red chilli powder 

1 teaspoon chopped green chilli 

Salt to taste 

1 teaspoon rajwadi garam masala 

1 teaspoon crushed garlic 

1 tablespoon chopped almonds 

1 tablespoon chopped cashew 

1 small onion finely chopped 

2 tablespoon par boiled & chopped carrot

2 tablespoon par boiled sweet corn 

2 tablespoon par boiled green peas 

For garnishing:

Finely chopped coriander leaves 

To serve with:





Method to make Veg. Masala Khichdi:

  • Mix all dals and rice in a pot and wash them. Soak for 30 minutes.
  • After that add ghee, asafoetida, turmeric powder and salt to it. 
  • Pressure cook for about 2 whistles. (Cooking time may be different)
  • Release the pressure after 10 minutes & then let it cool at room temperature. 
  • In a pan/kadai heat oil and ghee. Add mustard seeds to it. When crackles add onion, garlic, green chilies, vegetables, cashew and almonds one by one. 
  • Saute for 2 minutes. After that add all dry spices to it. Again cook for some time and then add ready khichdi to it. 
  • Mix well delicately. Cook for 3 to 4 minutes at medium to slow flame. 
  • Transfer to serving bowl and garnish with finely chopped coriander leaves. 
  • Hot and healthy Veg. Masala Khichdi is ready to serve. Enjoy it with lauki Sabji and gujarati Kadhi. 

Tips:

  • You can add or omit your choice of vegetables. 
  • Even you cal also add or omit your choice of dals also. 
  • If wish, add a spoon full of ghee at the time of serving.
