Paneer Paratha

Ingredients to make Paneer Paratha:
For the Dough:
2 cups whole wheat flour
Water as needed
Salt to taste
2 tablespoon sooji/semolina
2 tablespoon oil
Rice flour for dusting
For the Paneer Filling/stuffing:
200g crumbled paneer
1 small finely chopped onion
2 tablespoon finely chopped capsicum
1 teaspoon chili flacks
½ teaspoon freshly ground black pepper powder
1 teaspoon chat masala
1 to 2 minced green chili
2 tablespoons freshly chopped coriander leaves
1/2 teaspoon cumin powder
1/2 teaspoon garam masala (opt)
1 small boiled and grated potato for binding
1 cube grated cheese
Salt to taste
For Cooking:
Ghee, butter or oil for frying
Instructions to make Paneer Paratha:
For dough:
In a mixing bowl, add all the ingredients of dough
excluding water. Mix well and gradually add water, knead the mixture into a
soft, smooth dough.
Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
For Paneer Filling/stuffing:
In a mixing bowl, combine the crumbled paneer, chopped
onion, minced green chili, chopped coriander leaves, cumin powder, garam
masala, chat masala, black pepper powder, capsicum, chili flacks and salt.
Mix well and add grated boiled potato & grated cheese
to it. Mix the ingredients thoroughly until well combined. Your paneer filling
is now ready.
How to assemble:
Divide the dough into equal-sized balls, slightly smaller
than a tennis ball.
Take one dough ball and roll it between your palms to make a smooth ball. Flatten
the ball slightly and dip it into dry wheat flour.
Roll the dough ball into a small circle using a rolling pin, about 4-5 inches
in diameter.
Place a generous spoonful of the paneer filling in the centre of the rolled
dough circle. Gently fold the edges of the dough over the filling, covering it
entirely. Pinch and seal the edges to make a stuffed ball.
Flatten this stuffed ball with your palms and dip it in dry flour again.
Roll out the stuffed ball into a larger circle, approximately 7-8 inches in diameter.
Be gentle while rolling to avoid the filling from spilling out. You can take
dry rice flour for dusting if needed.
Heat a tawa or a flat skillet over medium heat. Place the rolled paratha onto
the hot tawa and cook for about 1-2 minutes or until small bubbles start to
form on the surface. Flip the paratha and spread a little ghee, butter or oil
on the cooked side.
After a minute or so, flip it again and apply ghee or oil on the other side. Cook
until both sides are golden brown and crispy, pressing gently with a spatula to
ensure even cooking.
Remove the paneer paratha from the tawa and place it on a plate lined with a
paper towel to absorb any excess oil or ghee.
Repeat the process for the remaining dough balls and filling.
Your flavourful Paneer Parathas are now ready to be served! They are best
enjoyed hot with a side of yogurt, pickle, or mint chutney.
