Dhokla Rolls recipe



Ingredients to make Dhokla Rolls:

For the Dhokla:

1 cup sooji
2 tablespoon besan
Salt to taste
½ cup yogurt
½ teaspoon ginger paste
1 teaspoon green chili paste
Oil for greasing

To sprinkle on Dhokla:

Red chilli powder
Podi masala

For special tadka (tempering):

1 tablespoon oil
2 teaspoon mustard seeds
2 teaspoon sesame seeds
1 to 2 green chillies slight length wise (opt)
A few curry leaves

For garnishing:

Freshly chopped coriander leaves

Instructions to make Dhokla Rolls:

For Dhokla:

In a mixing bowl, combine besan, sooji, yogurt, ginger paste, green chili paste & salt. Mix well and add water as needed to make smooth batter without any lumps.  
Rest the better for minimum 15 minutes.
Meanwhile, grease a thali or a shallow dish with oil. Greasing properly is must as we need to make rolls from it. Heat water in a steamer or a large pot.
Pour the batter into the greased thali to make thin dhokla. Place it in the steamer.
Steam the dhokla for about 10 to 12 minutes or until a toothpick inserted in the centre comes out clean.
Once done, let the dhokla cool for a few minutes before removing it from the thali. Cut it into strips.
Sprinkle red chili powder & podi masala over it when warm.
Carefully roll the strips. Try to make tight rolls. Repeat the same for remaining.
Place them in a serving plate carefully.

For the tadka (tempering):

In a small pan heat oil and add mustard seeds, sesame seeds, green chilies and curry leaves.
Allow them to splutter and become aromatic.
Pour the tempering over the dhokla rolls. Garnish with fresh coriander leaves. You can also sprinkle some podi masala over it if needed.
Serve the delicious dhokla rolls with green chutney, tomato ketchup or tamarind chutney.
