Ingredients to make fried masala Idli:
For the Fried Idli:
Leftover idlis: 8-10 (cut into bite-sized pieces)
Oil For deep frying
½ teaspoon mustard seeds
A hand full of curry leaves
¼ teaspoon asafoetida (hing)
½ teaspoon turmeric powder
Salt to taste
For Masala:
1 tablespoon oil
1 finely chopped onion
½ cup bel pepper (you can use any colour/all colour)
1 finely chopped green chili
1 teaspoon ginger garlic paste
2 finely chopped tomatoes
1 teaspoon pav bhaji masala
½ teaspoon Kashmiri red chili powder
Salt to taste
For garnishing:
Freshly chopped coriander leaves
Method to make Masala Idli fry:
For fried Idli:
· Heat
oil in a pan over medium heat for deep frying. Make sure the oil is at the
right temperature for frying.
· Carefully
add the bite-sized idli pieces into the hot oil. Fry them until they turn
golden brown and crispy. Remove and drain on a paper towel to remove excess
oil. Set aside.
· If
you are diet conscious, you can even shallow fry it.
For the Masala:
· In a
separate pan, heat a tablespoon of oil. Add mustard seeds and allow them to
splutter.
· Add
curry leaves and a pinch of asafoetida. Stir for a few seconds until fragrant.
· Add
finely chopped onions and sauté until they turn translucent.
· Stir
in the ginger-garlic paste and green chili. Sauté for a minute until the raw
aroma disappears.
· Add
the diced bell peppers and sauté for a couple of minutes until they start to
soften.
· Toss
in the chopped tomatoes and cook until they turn mushy.
· Sprinkle
pav bhaji masala, red chili powder and salt. Mix well and cook for a few
minutes until the masalas blend together.
· Add
the fried idli pieces into the masala mixture. Gently toss and coat the idlis
with the masala.
· Let
the idli pieces cook in the masala for a few minutes, allowing the flavours to
meld.
· Once
the idlis are coated with the flavourful masala and heated through, turn off
the heat.
· Garnish
with freshly chopped coriander leaves for a burst of colour and freshness.
· Serve
the Fried Masala Idli hot as a scrumptious breakfast, snack, or even as an
appetizer for parties.
