Recipe by Naiya Sheth: During this lovely season of winter it is advisable to eat more n more green vegetables. So, here it's a super delicious healthy recipe from pigeon peas. Earlier we made kachori - a very well known a mouthwatering Gujarati farsan from the same ingredient. But that was fried, so this time I made it as paratha with a little twist of fresh green garlic. The most important thing about this recipe is it is made in the microwave, so no need to observe and stir often. So, what are you waiting for let's make this healthy and yummy Hariyali paratha today as a heavy snack, lunchbox idea or as single meal dinner also.

Ingredients to make Hariyali Paratha:
For stuffing:
2 cups crushed pigeon peas
I crushed in chilly cutter or chopped
2 tablespoon green garlic paste
1 tablespoon oil
1 teaspoon cumin seeds
1 to 1 1/2 tablespoon finely chopped green chilly
A pinch soda bi carb
Salt to taste
1/4 teaspoon turmeric powder
2 tablespoon sesame seeds
2 to 3 tablespoon sugar
Juice of 1 lemon
2 tablespoon chopped coriander
I crushed in chilly cutter or chopped
2 tablespoon green garlic paste
1 tablespoon oil
1 teaspoon cumin seeds
1 to 1 1/2 tablespoon finely chopped green chilly
A pinch soda bi carb
Salt to taste
1/4 teaspoon turmeric powder
2 tablespoon sesame seeds
2 to 3 tablespoon sugar
Juice of 1 lemon
2 tablespoon chopped coriander
For outer layer:
1 cup whole wheat flour
2 tablespoon semolina
2 tablespoon oil
1 teaspoon melted ghee clarified butter
Salt to taste
Dry rice flour for dusting
Oil for shallow frying
To serve with:
Tomato ketchup
Method to make Hariyali Paratha:
For outer layer:
- Mix all ingredients of the outer layer and make semi-soft dough with the help of sufficient water.
- Keep aside covered for minimum 20 minutes.
For stuffing:
- Heat oil and add cumin seeds to it. When they crackle add soda bicarb, sesame seeds and green chilly to it. Add the mixture to crushed pigeon peas. Add crushed fresh green garlic paste to it. Mix well and add salt.
- Again mix well and transfer it to microwave safe bowl.
- Cook at micro hi for 3 minutes covered. Rest for 3 to 4 minutes.
- Again stir and cook for 2 minutes covered if required.
- If cooked add sugar and lemon juice to it. Mix well and cook for 2 minutes uncovered.
- That's it our stuffing id ready. When cool add finely chopped coriander to it.
- Make equal balls from stuffing.
How to assemble:
- Make equal balls from the dough and roll it. Place a stuffing ball in the middle of it and cover properly.
- Again roll carefully and make paratha.
- Heat tavi and place paratha on it. Cook until light brown and crisp both sides with oil.
- Hot, healthy and delicious Hariyali Paratha is ready to serve. Serve with tomato ketchup and green chutney.
