How to Make Pocket Quesadilla

Recipe by Naiya Sheth: As we all know quesadilla is a very famous and delicious Mexican recipe. But I have a twist as always. It's a home made recipe for pocket Quesadilla, means it is a same recipe for Mexican beans quesadilla with a small twist to make it easy. Actually I made it for my sons lunch box. And that's why I sealed it from all side instead of covering. And to make it healthier I tried to use more and more vegetables and whole wheat flour for covering instead of refined flour tortilla. So let's try this delicious byte size recipe of Pocket quesadilla today.



Preparation time - 10 to 15 minutes
Cooking time - 15 to 20 minutes

Ingredients to make Pocket Quesadilla:

For dough:

1 cup whole wheat flour
( I used multi grain flour)
1 table spoon semolina - sooji
2 table spoon oil
Salt to taste

For stuffing:

1/4 tin baked beans
1/8 cup kidney beans - soaked and boiled
1/8 cup soya beans - soaked and boiled
1 big onion finely chopped
1 big capsicum finely chopped
1/8 cup boiled sweet corn
1 cup paneer cubes
1/2 cup tomato pure
1 tomato finely chopped - de seeded
Salt to taste
2 tea spoon red chili powder
1 tea spoon chili flacks
1 tea spoon oregano
1 tea spoon ginger paste
1 tea spoon garlic paste
1 tea spoon Mexican seasoning
2 table spoon tomato sauce
2 table spoon oil
1 table spoon corn flour

Grated cheese as per choice
Oil for shallow frying

Method to make Pocket Quesadilla:

For dough:

  • Mix all ingredients of dough and make semi soft dough from it by using water.
  • Keep a side covered for minimum 30 minutes.

For stuffing:

  • Heat oil and add ginger, garlic paste to it. Cook for 2 minutes and add chopped onion to it.
  • Let it cook properly and then add tomato pure to it. Let it come to boil for couple of minutes.
  • Now add sweet corn, kidney beans, soybeans and baked beans to it. Mix well and then add capsicum, tomato and paneer to it.
  • At last add all seasoning and mix well.
  •  Add cornflour slurry to it and cook well. 
  • Remove from flame and cool.

How to assemble:

  • Make equal balls from dough and roll one of them.
  • Cut it in to 2 parts and spread some stuffing on 1/2 part of 1st one. Spread some grated cheese over it and at last cover.
  • Repeat the same for another one. 
  • Shallow fry with oil on griddle or non stick tavi.
  • Repeat the same for remaining.
  • Hot and delicious Pocket Quesadilla is ready to serve. Even can be used for lunch box also.
