How to Make Kulcha Burger

Another a very very delicious fusion recipe. A very interesting home made recipe is here. Kulchas are available in bakery now. And it is easy to make in our kitchen. In this home made recipe of Kulcha Burger ready made baked kulchas or home made kulchas can be taken. But to make it more healthy I tried to make it from whole wheat flour. It gives same result like normal refined flour kulcha. In normal burger we use burger bun which is made from refined flour. So try this yummy Kulcha Burger today. 

Preparation time - 15 minutes
Cooking time - 25 to 30 minutes
Makes - 4 

Ingredients to make Kulcha Burger:

For Kulcha:

1/2 cup refined flour
1/2 cup whole wheat flour
Salt to taste
A pinch soda bi carb
1 table spoon oil
1 table spoon curd
1 table spoon coriander leaves
Butter as needed

For Tikki:

3 no. medium size boiled potato - mashed
100 gram grated paneer - cottage cheese
2 table spoon finely chopped onion
2 table spoon finely chopped carrot
2 table spoon finely chopped capsicum
2 table spoon finely chopped coriander leaves
2 table spoon finely chopped cabbage
Salt to taste
3 to 4 chopped green chilies
1 tea spoon crushed ginger
1 tea spoon red chilly powder
1/2 tea spoon garam masala
1 tea spoon sugar
1/2 tea spoon roasted cumin powder
Crushed bread as required
oil 1 tea spoon

Oil for shallow frying

For Salad:

1/4 cup grated cabbage
1/4 cup grated onion
2 table spoon gated carrot
Salt to taste
1/2 tea spoon black pepper powder
1/4 tea spoon chaat masalo

For Spread:

1 table spoon red chilli sauce
2 table spoon mayonise
2 table spoon cheese spread

To serve with:

Tomato ketch up
Salad

Method to make Kulcha Burger:

For kulcha:

  • Mix both flours, salt, oil, soda bi carb and curd in a big bowl and knead a soft dough from it. Take some oil in your palm and again knead it properly. Keep a side covered for 2 to 3 hours.
  • Make 2 equal balls from it and make oblong medium thick kulcha from one of them apply some coriander leaves on it and press. 
  • Roast it on tavi - griddle at medium flame from both sides till light pink in colour. 
  • Repeat the same for another. Keep a side.

For tikki:

  • First of all heat oil in a pan. Now fry onion in it, add other vegetables, sauté it for 2 minutes. Add boiled potato and salt, green- red chilly, ginger, garam masalo, sugar and mix well. At the end add paneer and crushed bread as required. 
  • Make 4 tikkies from it. Shallow fry them with oil or butter and keep a side.

For spread:

  • Mix all ingredients of spread properly and keep a side.

For salad:

  • Make thin slices or great big to all vegetables. Add spices to them and keep a side.

How to assemble:

  • Cut kulcha in two parts. Make a slit in one of it. Apply some spread in side the kulcha. Now spread some salad over it and place a tikki in it and keep a side.
  • Repeat the same for remaining.
  • Apply some butter on both sides of kulchas and grill in electric griller for 5 minutes. (grilling can be avoided.) 
  • Hot and spicy Buger kulchas are ready to serve. Serve it with tomato ketch up, salad and potato chips.
