Recipe by Naiya Sheth : Learn how to make Carrot Pickle. It's winter now, a great season of red carrot. In earlier recipe we learn to make gajar ka halwa - means a sweet dish from carrot. But now it's a different recipe from carrot, can be said a tempting dip. It can be taken roti, paratha, naan or kulcha at lunch or dinner time. It can be said that carrot pickle is a very testy and quick pickle, specially for winter.
Preparation time - 10 to 12 minutes

Ingredients to make Carrot Pickle:
2 1/2 cups carrot strips
1/4 cup mustard oil
1/2 tea spoon nigella seeds (kalongi)
2 to 3 table spoon crushed mustard seeds
A pinch asafoetida
1/2 tea spoon red chilli powder
1/2 tea spoon crushed fenugreek seeds
1 table spoon salt (approx.)

Method to make Carrot Pickle:
- In a mixing bowl mix all the ingredients excluding oil.
- Heat oil in a pan till boiling temp.
- Add carrot mixture to hot oil and mix well.
- Again cook for 1 to 2 minutes. Let it cool at room temperature.
- Store Carrot Pickle in air tight container in refrigerator.
