Vermicelli Upma Recipe

Ingredients to make Vermicelli Upma:

1 cup vermicelli (thin/medium)
1 onion finely chopped
1/2 small capsicum finely chopped
1 small carrot finely chopped
1 small tomato finely chopped
2 table spoon oil
1 tea spoon mustard seeds
2 tea spoon urad daal
1 table spoon chopped cashew nut
8 - 10 raisins
Salt to taste
¼ teaspoon turmeric powder (opt.)
2 cup hot water
2 - 3 green chilies finely chopped
1 tea spoon lemon juice
8 - 10 curry leaves
4 - 5 French beans finely chopped
2 table spoon boiled green peas

For garnishing:

Freshly chopped coriander leaves

Method to make Vermicelli upma:

·       First of all heat oil in a pan, add mustard seeds to it. When it crackles add urad daal, cashew nut, raisins, curry leaves and green chilly. When cashew and urad dal turns to light brown add onion and fry for 1 minute.

·       Now add French beans, carrot and capsicum to it. Sauté for 2 minutes. Now add green peas and vermicelli and roast till vermicelli turns light pink.

·       Now add hot water to it. Add salt and lemon juice. When water is about to absorb add chopped tomato and cook for a single minute.

·       Garnish with finely chopped coriander leaves.

·       Your delectable Vermicelli Upma is now ready to be savoured! Serve it hot with a side of coconut chutney, pickle, or just enjoy it as is.
