Tomato rice is very good option for rice lovers. This recipe contains rice,coconut milk and of course tomatoes so, it is good source of vitamin c and proteins.

Ingredients to make Tomato Rice:
Basmati rice | : | 1 cup |
Tomato pure | : | 1 cup |
Coconut water | : | 1 cup |
Finely chopped onions | : | ½ cup |
Ginger garlic pest | : | 1 table spoon |
Cumin seeds | : | 1 tea spoon |
Red chilly powder | : | 1 tea spoon |
Garam masalo | : | 1 tea spoon |
Curry patta | : | 8 – 10 |
Water | : | 1 ½ cup |
Oil | : | 2 table spoon |
Salt to taste |
For garnishing: |
Boiled green peas |
Sliced tomato |
Finely chopped coriander |
- Mix oil,rice,onion,crushed ginger garlic cumin seeds and curry patta and cook at high temperature in microwave proof bowl for 3 minutes.
- Add other ingredients and mix well. Cover with clean film, make some small holes on it, so that steam can release.
- Cook for 7 minutes at micro- hi, than 3 minutes for micro - med and 2 minutes for micro - lo. At last stand for 2 minutes.
- Garnish with green peas,tomatoes and coriander leaves. Delicious hot Tomato rice is ready to serve.
