Ingredients to make Dabeli Bruschetta:
For Dabeli Filling:
4 medium-sized potatoes, boiled and mashed
1 big finely chopped onion
1/2 cup roasted peanuts, coarsely ground
2 tablespoons Dabeli masala
2 tablespoons tamarind chutney
2 tablespoons garlic chutney
Salt to taste
2 tablespoons oil
For Bruschetta Base:
1 French baguette, sliced into 1/2-inch thick pieces
3 tablespoons olive oil
2 cloves garlic, minced
Salt to taste
For Garnish:
Freshly chopped coriander leaves
Pomegranate seeds
Method to make Dabeli Bruschetta:
For Dabeli Filling:
Heat oil in a pan and sauté chopped onions until golden
brown. Add mashed potatoes, Dabeli masala, salt, and roasted peanut powder. Mix
well.
Add tamarind chutney and garlic chutney. Adding chutney is totally optional, if
you want mild taste you can avoid it. Cook for 5-7 minutes until the filling is
well combined and aromatic. Set aside.
Prepare Bruschetta Base:
Preheat the oven to 375°F (190°C).
In a bowl, mix olive oil, minced garlic &salt.
Brush the sliced baguette with the garlic-infused oil mixture on both sides.
Place the slices on a baking sheet and bake for 8-10 minutes or until they are
golden and crispy.
Assemble Dabeli Bruschetta:
Take a spoonful of the prepared Dabeli filling and spread
it evenly on each toasted baguette slice.
At this stage you can again bake it got 2 to 3 minute. This is again optional.
Garnish:
Sprinkle chopped fresh coriander leaves and pomegranate
seeds on top of the Dabeli filling for a burst of colour and freshness.
Arrange the Dabeli Bruschetta on a serving platter and serve immediately.
Tips:
Instead of olive oil you can use butter.
