As the name indicates it is made with semolina (rava) and rice flour. This home-made recipe of Rava Dosa is easy to prepare and perfect for a quick and delightful meal.

Rava Dosa

Preparation time – 10 minutes
Cooking time – 15 to 20 minutes
Makes – 20 dosas approx.

Ingredients to make Rava Dosa: 

1 cup fine semolina (rava)
1/2 cup rice flour
1/4 cup all-purpose flour
1/4 cup finely chopped onions (opt.)
2-3 green chilies, finely chopped
1 tablespoon grated ginger
1 tablespoon chopped coriander leaves
1/2 teaspoon cumin seeds
1 1/2 cups water
1/4 cup yogurt
Salt to taste
2 tablespoons oil

Method to make Rava Dosa:

For batter:

·     In a large mixing bowl, combine the semolina, rice flour, all-purpose flour, green chilies, grated ginger, coriander leaves and cumin seeds.

·      Add salt to taste and mix all the ingredients well.

·      Slowly add water to the mixture while stirring continuously to form a smooth, lump-free batter.

·      Once the batter is ready, add yogurt and mix it thoroughly. The yogurt adds a slight tangy flavour and aids in fermentation.

·      Cover the bowl and let the batter rest for at least 30 minutes. This resting period allows the flavours to meld and the batter to ferment slightly.

For preparing Rava Dosa:

·    After the resting period, check the consistency of the batter. If it has thickened, add a little water and stir to get a pourable consistency. The batter should be thin, similar to buttermilk.

·    Heat a non-stick or cast-iron dosa tawa (griddle) over medium-high heat. Once hot, drizzle a few drops of oil and spread it evenly using a sliced onion or a paper towel.

·   If you want to make rava onion dosa, sprinkle some finely chopped onion on tawa at this stage.

·   Stir the batter well, and then pour a ladleful of batter on the centre of the tawa. Carefully pour the batter on hot tava. Make sure to pour the batter from 6” to 7” height from tava.

·   Drizzle some oil/butter around the edges and on top of the dosa.

·   Cook the dosa on medium-high heat until it turns golden brown and crispy on the edges.

·   Using a spatula, carefully lift the dosa from the tawa and fold it into a half-moon shape or roll it like a cone.

·   Repeat the process for the remaining batter, making as many dosas as needed.

·   Serve the hot and crispy Rava Dosas with coconut chutney, sambar or any other chutney of your choice.
